When To Go: Spring Break, X-Mas, First Week June?

We are in the process of planning another trip to WDW and need help deciding when to go. We have always gone the week before Christmas, but do to the new school calendars, we no longer have the week before Christmas off and have always left WDW before Christmas Day.

When would be the best time to go: Spring Break (the week before Easter), Christmas (would include Christmas Day) or first week of June? We are going to go to Discovery Cove this next trip. Any suggestions? This trip won't be for at least a year if not longer.

THe week of Christmas and the week before Easter are some of the most crowded times from what I understand, not that the crowds are light in June! But of the three I would go the first week of June, actually I am going the first week of June! Leaving June 3 for a week at POFQ.
