When to go in 2021

So we are looking to go to WDW either the weeks of Jan 27th to Feb 3rd or Nov 3rd to Nov 10th in 2021. We love the jan/feb week for weather and crowds, we've been that week before. Nov would celebrate 3 of 5 family members' birthdays. But we've just realized it is right after/during the 50th anniversary. I Veteran's day and Jersey week. What do you think the crowds will be like during that week? I'm ok with more crowds, I know it will be more crowded. I dont think I could handle it with insane crowds though.
 
Our 3rd trip was the last week of Jan and the first week of Feb and it was incredible. We are rope drop people and the amount of rides we could do in the 1st 4 hours was wild. Can't do that anymore because daughter was in 1st grade and the school bent over backwards to help her. Because of school trip #6 for us will be the last week of May and the first week in June (we do long trips every 3 years or so).
 
I did Jersey Week in 2018. It wasn't bad except for Epcot on the weekend. Veteran's Day Weekend ended up being the last weekend of F&W that year so it was complete insanity that Saturday 11/10 by 2 pm. The other parks were very manageable. RD and using FP+ made it work and we only did RD once for each park. The rest of the time we slept in and started late. We had a great time and would definitely do it again. We got to see Xmas decorations and did the first Xmas party.

When do they put up Christmas decorations? I thought it would still be Halloween decorations. It would be about nov 2nd or 3rd to the 9th or 10th.

We arrived November 2 and some decorations were up the next day on November 3 for MK. The tree was up by the 6th I believe. The first party was November 8th so decorations had to be up before the party. We left on November 11 and by then all trees were up in all parks.
 
We have gone in mid-November a few times and this last time, we arrived on Veteran's Day, so just a little out of your window. The crowds weren't too terrible through the week, but more than we had experienced in the past . I do think F&W is growing in popularity compared to similar weeks I had been in the past. The weekend after Vet's Day was atrocious and I told myself not to stay over a weekend again. F&W at Epcot made all evenings at Epcot very crowded. We steered clear as much as possible. I still got the chance to witness a drunken fight outside of Test Track.
