When to book activities

When I made our reservations a few months ago (for Easter break), they suggested I call 90 days before we get there to book activities. These are the things we are interested in doing....can you tell me how far ahead of time (if at all) we need to book them....

Boat rental, horseback riding, Mickey's Backyard BBQ, Hoop Dee Doo Musical Review. Is there anything else you can think of that I need to book early ?? (We already reserved a golf cart and we are taking our bikes with us).

I've never gone, but I hear that the Hoop De Do Review books a year in advance. If you want to go, I would book now.
