When they release dates , does the price go up every hour or by day . I'm planning on buying tickets the day they release them but not until the afternoon time

It is fairly common for the lowest fares released on the first day to be sold out in a very short period of time; sometimes within an hour. That's especially true for non-stop flights (where available), for flights at preferred times of the day (early morning going down to MCO and evening coming back, for example) and for flights during high-demand periods (holidays, spring break, etc.). If you're willing to travel with a connection, at off hours or your trip is during one of the slower times of the year (as limited as those may be these days) then you may have better luck with some of the cheaper fares being available later in the day.

It's possible that fares will be reduced or that there will be sales later on down the road, but those generally are going to be for the less desirable flights that I outlined above.

So the tickets I need to buy will be released on July 22. About what time does that "window" open? These tickets go rather quickly and I want to be there and ready to snatch them up when I can.

The new dates typically become available at about 5:30 a.m. CT on the release date.

I'm looking to fly out the 14th or 15th of February I'm sure they will go quickly ... But we have 4 different airports to chose from so hoping that with not being able to get them right at 5am will be ok ... Should be able to about 8am

You're on eastern time, so that helps a bit as the schedule will open at about 6:30 a.m. your time.
