What's your Easter menu?

Bake cheesecake in muffin tins (use whatever recipe you like). Top with green-dyed coconut or use green icing with a grass tip if you don't like coconut. Put some jelly beans or chocolate eggs in the middle of the green "nest" and then use a piece of licorice for the "handle"- just stick it far into one end of the cheesecake and then push it in the opposite side so the loop sticks straight up.

I saw that in Family Fun only made with Rice Krispie treats and pastal peanut M&Ms for the eggs!
 
This year will be a nice laid back easter with friends. No family drama!

We're having heavy h'ors doeurves for lunch- sweet & sour meatballs, pigs in blanket, popcorn chicken -with a crudite and dip. (I'm trying to clear out my garage freezer to defrost it so I am using all ingredients I have!)

Dinner will be :
Spiral Ham
Lemon Chicken stuffed with spinach/feta (I don't eat pork-so this is especially for me!)
salad
baked beans(this was requested by our friends in advance)
mashed potatoe pie
cole slaw
pasta salad or mac n cheese.

desert- I'll probably whip up sugar cookies and a chocolate cream pie.
 
Our Easter weekend menu is basically the same every year;
Good Friday - veggie pizzas
Saturday - green chili burritos, enchiladas, steak & chicken fajitas, refried beans, spanish rice, green salad and homemade brownies & ice cream
Easter Sunday - we bbq steak, chicken breast, shrimp, sides are green salad, ramen chicken salad, fruit salad, potato salad, baked beans, corn on the cob, and cake from Costco.
 
Anniversary Chicken
Brown rice
Strawberry spinach salad
Asparagus (with parmesan)
Banana pudding

This will be on Saturday. We'll have ham sandwiches, deviled eggs, and macaroni salad for late lunch on Sunday.

Oh, and breakfast casserole and cinnamon rolls for Easter breakfast.

Polish by marriage, so along with cooking we will be making our sausage this week and the pierogi. I had to cut back this year though, it gets harder each year, so we are making 20#'s of sausage and probably around 35 dozen pierogi.

Dinner Menu:

Polish sausage (fresh with Marjoram)
Pierogi (farmer cheese, potato cheese, and hot cheese potato)
Pierogi (sauerkraut - purchased at the market)
Caramelized onion for the pierogiRye Bread
Butter Lamb
hard boiled eggs
deviled eggs
Horseradish/mustard

Dessert:

Babka
Chrusciki
Kolaches

Our Easter dinner - husband, kids and I, mom, 16 y/o sister and stepdad:
For apps:

celery stuffed with spreadable cheddar/cream cheese mixture

For dinner:

For dessert:

either lemon bars or a trifle with pound cake, homemade pudding and berries

We are having brunch :goodvibes

Then we'll do it again later with
Ham sammy's
deviled eggs
and a chopped salad.
 
For Easter Breakfast the children and I always make Resurrection Rolls.

My job is to make dessert!
I made a double batch of peanut butter fudge AND a homemade Kandy Kake cake.
 
Ham, auGratin Potatos, salad, brocolli, rolls.

Snacks will be Strawberrys & soy whipped cream and whole wheat pretzel bites.

Dessert will be Cherry cake pops.

I have decided to take it easy on the holiday cooking. :scared1: At Thanksgiving, I'll pull out all the bells and whistles, but on Christmas and Easter, I'm going the easy route. I spent a lot of time in the kitchen on holidays, instead of being there, sharing moments with the kids. No more. :banana:

My menu tomorrow:

Risotto with grilled asparagus and grilled chicken breast (Dh is grilling the meat/asparagus, I'm making the risotto)
salad (the kids are making)
those "blue can" rolls (what the heck are they called--you roll them up)
cupcakes (not sure what kind, depends on what everyone feels like) maybe--there is a lot of kettle corn left from the baseball game tonight, plus the easter candy...

I can't make a ham. DD2 does not eat pork in any form (because pigs are cute); DH can't eat ham--too much sodium; DS only likes ham sandwiches. I really miss ham on Easter (pop in, glaze and go). /sigh
