What's your Easter menu?

I've never cooked easter dinner before, so this is a first for me. Actually, I've never hosted any holiday before! :scared1:

Our group consists of 7 adults, 5 kids, 1 baby, and 1 fetus ;), so it leans a bit to the kids.

This is the menu as of today (it changes often):

Ham (my friend is coming early to cook this)
mashed potatoes
corn
broccoli
applesauce
crecent rolls and grands jr flaky buscuits
deviled eggs
funfetti cupcakes for dessert

(might talk my mother into bringing cookies too)

Also serving snacks during the egg hunt:
cheese and crackers
cut fruit
 
For Easter Breakfast the children and I always make Resurrection Rolls.

For Easter Dinner:

Ham
Baked Mac and Cheese
Potato Salad
Baked Beans
Deviled Eggs
Pistachio Salad
Rolls
Coconut Cake

YUM! I am so hungry now, LOL! :rotfl:
 
I try not to tell my family members & guest what im making because everyone has their opinion on what to make and in the end they are all happy and eat what i make.

Turkey Tenderlion
Ham ( small)
Polish sausage & saurkraut
Pierogi
sweet potato
Mash Potato
deviled eggs
green beans

Lamb Cake
pie or truffle
cookies

This menu can change at any min. HaHaHEE

I'll be making a ham, mashed potatoes, corn and ravioli's or lasagna. For dessert I'll be making Cheesecake stuffed strawberries and the italian anise cookies :)
 

Dinners @ my house this year :)

Prime Rib & Ham
veggies--asparagus & brussel sprouts (lots of butter & garlic)
cheesy potatoes
chicken salad (doesn't really go, but its a MUST for all family gatherings)
rolls
pickles/olives
snacks (chips, cheese, salami, crackers, shrimp, pinwheels, etc)
beer, wine, & soda
strawberry shortcake for dessert

I finished most of my shopping this AM :thumbsup2

Please share the recipe--I have never heard of this but they sound AMAZING!!!!!!!!!!!! :worship:

We make homemade raviolis instead of lasagna.

Send me some anise cookies, please. I love them. I can't wait until wedding season starts so I can get me some anise cookies at the reception!

It's pretty easy but kind of time consuming. First hull the strawberries and then carefully pipe in cheesecake filling. Sometimes I use the Philly premade or I'll whip up a cheesecake filling using either the jello cheesecake flavor or creamcheese and powdered sugar mix. After that I place the strawberries in the fridge to set, then dip them in chocolate and dip the top part in graham cracker crumbs they're a big hit!!

OMG those amazing!!!!! I might have to do that instead of strawberry shortcake! YUM!!!! :)

I realized I didn't put what I'm considering doing for our Saturday meal....ham, green bean casserole, deviled eggs, cresent rolls and for dessert I was thinking of making cupcakes with mini cookie flowers on top. :)
 
Easter meal for us will be:

cold antipasto tray
layerd artichoke/ranch cheese spread

home made manicotti with meatballs & sausage
spriral honey glazed ham
string beans/glazed carrots
potato salad
mashed potatos
deviled eggs

cheese cake, pizzelle cookies, coconut custard pie, chocolate pot o creme'

sherbert punch/soda/coffee

Well, if it makes you feel any better, DD10 and I will be having spaghetti and meatballs (no ham or anything else) - it's our own little weird Easter tradition :lmao: Since it is a holiday, I'll make it a bit more exciting by adding garlic bread LOL
 
I'll be making my favorite Easter meal of all... reservations for the 9:30 a.m. sitting at the country club for brunch! We'll attend the Easter Vigil mass the night before so we can walk our brunch off instead of sitting in church. :goodvibes
 
Our small family of 4 will be eating KFC!!!! I'm not cooking this year for any holiday except Thanksgiving and Christmas! I'm so lazy!lol
 
We are having spiral ham, tuna mac, potato salad, deviled eggs, taco salad, enchiladas, and baked beans. We probably will make other things but as of right now thats our dinner.

I need to add something green too. I'm not sure why I'm bothering, since no one will probably eat it anyway. :laughing:
 
With 3 diabetics in the family, I'm trying to stay away from a lot of carbs...
Ham (not honey baked!)
spinach salad
fresh fruit salad
steamed aspargas
steamed brocolli and carrots
still looking for dessert!!!
 
How does she make the mini cheesecake Easter baskets?

Bake cheesecake in muffin tins (use whatever recipe you like). Top with green-dyed coconut or use green icing with a grass tip if you don't like coconut. Put some jelly beans or chocolate eggs in the middle of the green "nest" and then use a piece of licorice for the "handle"- just stick it far into one end of the cheesecake and then push it in the opposite side so the loop sticks straight up.
