I have so enjoyed trying all of the ideas I've gotten off of pinterest. My favorite part is the recipes - esp. crockpot recipes. There is nothing nicer than coming home and having dinner basically ready.

This morning, I'm trying a new recipe. Crockpot Corn Chowder We'll see how it turns out later. Next one on my list to try is Chicken Taco Chili (which my husband has decided will be gross but we'll see!)

What's your favorite crockpot recipe?
 
Taco soup... it's in the Crock right now. It's so easy...one can each of white corn, tomatoes, black beans, pinto beans (I use low sodium) and a can of coke. Add 1/2 a packet of taco seasoning if you want. I put in frozen chicken and shredd before serving. Serve with cheese, sour cream and Tortilla chips.

My favorite crockpot recipe is the easiest one ever.

Take a package (about a pound) of skinless, boneless, chicken breasts or thighs & dump them in the crock pot.

Add a package of low sodium taco seasoning (or 2-4 tablespoons if you make your own or buy in bulk) and a jar of your favorite salsa.

Cook on low for 8 hours.

The chicken is fall-apart tender. Can be used in burritos, tacos, over rice, in quesadillas, etc.

Some people add a can of black beans and/or corn to stretch the chicken a little bit. And others add a big dollop of sour cream or some low fat cream cheese when the cooking is done. I've added sour cream, but not veggies. Sometimes, if I want more juice or tomato flavor, I'll add a can of petite diced tomatoes.

Generally, I serve it over rice with a dollop of sour cream and a sprinkle of grated cheese.
 

Super easy, but huge crowd pleaser

package of boneless pork chops
1 package of Lipton's Onion Soup Mix
1 medium-sized bottle of Kraft Zesty Italian salad dressing
a good-sized spash of Worchestire sauce

put everything into the crock, give it a nice spin making sure to get the chops nice and coated with all the ingredients

cook on low 7-8 hours and voila delicious "magic porkchops" that's what the kids are calling them.

We usually get a nice gravy out of this dish and pair it with mashed potatoes and green beans and we are good to go.

Very good, very easy and a huge hit for hard-to-please inlaws :)
 
I tried a new one on Monday that was a hit in my house...

4 boneless, skinless chicken breasts
1 can cream of chicken soup
about a cup of chicken broth
one box of seasoned stuffing
about 1/3 cup of water

put chicken breasts in slow cooker and pour broth over them, combine other indgredients in a bowl and spoon over breasts. Cook on low for 7 hours. I added green beans as a side. The chicken and stuffing were delish and there was a gravyish broth in the cooker to cover the chicken and stuffing with.
 
Our current favourite is to get a roast on sale and cook it on high for 4-5 hours. I usually add an Au Jus packet, or mix in the seasonings for it with a cup of water. Then we slice it and have it on buns with cheese and Au Jus for dipping. It really couldn't be easier and tastes wonderful.
 
Mine is a really easy pot roast. Get a chuck roast on sale, but it in with 1/2 bottle of Cabernet and a package of onion soup mix and cook all day. You can add potatoes, carrots and onions if you want, or make mashed potatoes and frozen carrots before you eat.
 
Our favorite is flat cut brisket...biggest you can get. Slice large onion and put in crockpot. Season brisket heavily with salt and pepper and even onion powder. Pour a jar of your favorite bbq sauce over it and cook all day. Tastes best when made one day, then cooked some more and served the second day.

Goes great with mashed potatoes or even baked.

One hint is to slice the meat when done the first day and put back in sauce for an hour or so. Makes the meat very tender and juicy.

I like this one too! I do add black beans and corn :). The last time I made it I also added some green peppers.
 
I havent been on this forum in a while, but jumping in.. I have 2 recipes that are super easy and delicious...

Sausage Pepper Onion Potato

2 lbs sweet italian sausage, cut into bite size pieces
4-6 large potatoes cubed
2 large pkg of frozen pepper and onion strips
Cook on high for 4-5 hours or low for 7-8.
*This makes a lot, can easily feed 6 adults+, easily halved.


Beef and Peppers

1-2 lbs stew meat
1 large pkg frozen pepper strips (or pepper & onion)
2 cans of tomato soup (undiluted)
1 pkg dry onion soup mix

Cook on low 8 hours or high 4-5 hours, serve over rice
**disclaimer: Dont let the tomato soup throw you off- I am not a fan of tomato soup but this does Not taste tomato soupy at all, just a nice flavor

I put a whole chicken in the pot, and add a lemon, some cream cheese, some olive oil and salt and pepper. I cook it all day. After it is done, I put it in the oven to broil to make it brown. I am doing it right now. I smells wonderful.

Cranberry Pork Loin:

1 boneless Pork loin
2 cups apple cider or apple juice
1 can whole berry cranberry sauce
1 tablespoon horseradish

Cook on low for 8 hours. Slice thinly and serve over mashed potatoes
