What's your AK plan?

Rope drop - midday break - back in the late afternoon/evening. FP for safari for 7:25-8:25 (as I have watched a bad (media) review of the safari at dark and heard of another one), hoping for a JB 9pm show (so FP 8:25-8:45 based on what is offered for Fantasmic), and then hoping for EE 9:30-10:30. Currently have a FP for the character meet & greet but we have an ADR for Tusker House so we don't really need to do the m&g (we will switch to JB show if possible).
 
I moved our 6:00 pm Boatwright's ADRs back to 5:00 pm a few months back when they first announced AK will be open until 8:00 on the day we're there. I figure we'll hit AK at park open, leave sometime early in the afternoon, then return after dinner.
 
I booked safari 6:30-7:30 in early June- sunset time is 8:23. I had the chance to book 8:40-9:40, but we are going with extended family and this is one ride we wanted to do together. One family in our group has a two year old and plans to keep her on her schedule, so they are insistent that they will be leaving the parks no later than 8:00 every night. Do you think if we go at 7:30 we will get the sunset safari effect, or will I be disappointed? I also read somewhere on here that in the past on the night safari it was hard to see the animals. Has this changed? Not that it matters because it won't be dark when I get to go, just curious.
 

Now that I think about it, the itinerary for our AK day may be too ambitious. Here is what I originally planned:

8:00am - RD (EMH)
KS
Wildlife Express Train ?
10:15am-11:15am - EE (FP+)
11:30am-11:50am (noon show) - Finding Nemo (FP+, but will cancel, when JB show FP+ is offered)
Lunch: Flame Tree BBQ
OPEN for various rides/attractions (Dinosaur, etc.)
6:00pm - Lion King show
7:00pm Dinner: Tusker House (ADR)
Jungle Book show ?
Tree of Life Awakens ?
9:30pm-10:30pm - KS (FP+)
EE at night

I think we'll be exhausted. I feel we will need a break. There should be a big gap after lunch at Flame Tree BBQ and before the LK show, which we don't "have to" see. As long as we're back in the park for our ADR at Tusker House. Maybe those that need it, can go back to our hotel to rest up for the night.
