What's on your menu for this week? New Week 11/8

I made the stick chicken lastnight. OMG it was so nasty. This is why I hate trying new recipes sometimes. It smelled and looked great but it like eating a salt rock. I took the chicken back and put it back into the skillet with some orange juice.

We ended up having the veggies and rice and then big ice cream sundaes. My husband, the brave warrior, took some chicken for lunch today and I'm going to try some later with noodles and more veggies.
 
Well, last week ended up getting all messed up so I have plenty of chicken left to cook with.

Sunday: Chicken and dressing, cranberry sauce, creamed corn

Monday: leftovers
Tuesday: frozen pizza (dance night)
Wednesday: bbq chicken wings
Thursday: Chicken and dumplings
Friday: turkey chili
Saturday: pork roast

Starting a new weight loss plan this week too! Trying to count calories, use lots of portion control and eat the same foods as my family (just making a few changes to reduce fat and calories). And exercise everyday.
 
Sunday: Garbonzo bean stir fry with escarole and raisins w/veggie meatballs
Monday: Make your own sub sandwiches and baked fries
Tueday: Cheddar Vegetable Chowder
Wednesday: Pasta with broccoli rabe, tomatoes, and mozz
Thursday: Thai red curry w/vegetables and tofu
Friday: Quick and easy, Trader Joe's cheese enchiladas with refried beans
Saturday: Eat out
 
Monday (last night) - Tuna Casserole, sauteed potstickers, and roasted broccoli.

Tuesday - Beef Filets w/Blue Cheese butter sauce, multicolered cauliflower, an some form of potato.

Wednesday - Spaghetti, salad, bread.

Thursday - Ham Steaks, roasted acorn squash, baked beans.

Friday - Chicken Cordon Bleu, carrots, and something else!

Can you share the recipe for homemade sour cream biscuits? They sound yummy!

They are yummy and I would be happy to share, but I am one of those annoying people who does not really measure anything so I will just have to do my best:flower3: The best thing to do is make your favourite regular biscuit recipe but do not add any of the liquid. Then replace the liquid with about a cup or sour cream (or low fat sour cream--which is what I use and it works fine). The dough usually comes out pretty sticky. You can add more flour until you get a rolling consistency and then they will bake up light and fluffy, or you can do drop biscuits with the sticky dough and they will be a little flat and lumpt but super rich tasting (taht is what I do for family--but I make the "prettier" version for guests;)).
If you want a recipe here is more or less what I do (not very good for you--but we only have them about once a month and at least they are not processed:)):

1/3 cup butter or vegetable shortening
1 1/2 cups flour (plus more to knead in later to get the consistency you want)
1 tablespoon baking powder
dash of salt
1 cup low fat sour cream

mix the dry ingredients together. Cut in the butter or shortening (the colder it is when you start the better) until it is all small chunks. Add the sour cream and mix with a wooden sppon until even textured. Drop biscuits into a lightly greased or buttered glass baking pan OR knead in additional flour until doigh is managable and no longer sticky. Roll out to about 1/2 imch thick and then cut biscuits. Bae in a glass dish which has been slightly greased with butter or shortening. Bake at 420 for about 15 minutes.

Awww, sorry your new recipe wasn't good. I hate it when I try new things and it doesn't work out. Don't let it scare you away from other new things though:)
 
I know it wasn't me that you asked for the sour cream biscuits but I have a sour cream muffin receipe that seems like biscuits. It's from Paula Deen.

Ingredients
2 cups self-rising flour
2 sticks butter, melted
1/2 pint sour cream
Directions
Preheat oven to 350 degrees F.

Combine all ingredients and spoon into small, un-greased muffin tins. Bake for 20 to 30 minutes.
 
Wanted to get this going for the new week!

I only have 3 meals to cook 11/8-11/14 but here they are...

1) Chili with corn bread
2) Maple glazed pork chops with roasted potatoes and onions
3) Parmesan Tilapia Rollups with corn and rolls
 
Here is the recipe I promised last week. I am pretty sure I found it on the DIS somewhere so I can't take credit for it. It's yummy though!

1 C packed brown sugar
1/2 C butter or margarine
2 TBL water
1 can sliced peaches--drained
12 slices cay old french bread sliced 3/4 inch thick
5 eggs
1-1/2 C milk
1 Tbl vanilla
ground cinnamon

In a sauce pan, bring brown sugar, water and butter to a boil. Reduce heat and simmer for 10 minutes, stirring frequently. Pour into a greased 13 X 9X 2 inch pan. Top with peaches. Arrange bread over peaches.

In a bowl whisk together eggs, milk and vanilla, slowly pour over bread
Cover with foil and refrigerate over night.

Remove from refrigerator 30 minutes before baking. Sprinkle with cinnamon.

Bake at 350 for 20 minutes covered. Remove cover and bake for 25-30 minutes longer or until bread is golden brown.

I usually make a half recipe and don't use as much butter/sugar. In a pinch you could also use pancake syrup on the bottom. I have used peaches, blueberries and apples and they have all been good.

beef stew with potatoes and various left over bits of frozen veggies
salmon
hotdogs
 
I'm out of state. My husband is on his own for dinner so no menu this week.

I might get my "free" turkey that I earned at the store for later in the week, since I'm going away for Thanksgiving, and I have no room for it in the freezer.

Monday-beef roast
Tuesday-hot turkey sandwiches
Wednesday-round steak with onion gravy
Thursday-chicken and dumplings
Friday-left overs
Saturday-pork roast

I am trying to lose weight and its only me and dd this week, so I imagine next the pork roast will turn into another day of leftovers. I am trying some great sounding recipes that uses no-fat or low fat ingredients for several of these meals. Plus, these things were on some terrific sales this week.
 
I only have a few meals left and have to go to the commissary in the middle of the week but I have:

Spaghetti/parmesan knots/salad
Italian marinated grilled chicken/rice/corn on the cob or green beans
Taco Soup
Chicken stirfry/rice
 
Sunday- Chicken Parm and Salad
Monday- Beef Stroganoff- Quick and easy as we have gs
Tuesday-? I think its just dh and I so it may be a fend for yourself night
Wed-Burgers and fries
Thursday- Pork chops, au gratin taters
Friday- Pizza for the kids and Hubby ( I work Afternoons
