What's on your menu for this week? New Week 11/8

Monday we had those triangle spinach ravioli from Costco.mmm and easy with garlic bread.

Tuesday was Chicken enchilladas with Puerto Rican rice.

Tonite will be Sole Munier(I think I spelled that wrong- it's the butter sauce) with rice

Thursday will be Roast Chicken with rice and whatever veggies my farmer has left(probably butternut squash)

Friday-Bacon and tomato pasta with Garlic bread and salad

Saturday lunch will be Chicken Quesadillas with the leftover chicken
and dinner hmmm not sure yet. OH Pork Chops! With seasoned fries!

FYI on the sweet potato fries: WalMart now has Great Value brand, frozen sweet potato fries. They are really good and the bag was only $1.98. It will be enough for my family to have twice. I have tried cutting my own but can't seem to get them thin enough to crisp up.

I have fried these and cooked them in the oven (400 degrees on a pizza pan that has holes in the bottom of it) and they were great both ways. We like them either salted or with a sprinkle of cinnamon and sugar.

We love sweet potato fries here too. I use a touch of sugar and chili powder to have the hot but sweet taste. I miss the real walmart. Ours doesn't sell groceries here:eek: I will look in the commissary.

Well we've already change the menus for this week. That's why I have all the meals listed on a dry erase board lol

Monday--chicken enchiliadas
Tuesday--homeme pizza with salad
Wednesday--pancakes with bacon and fruit salad
Thursday--beef strogonaff or something else crock pot
Friday-- dinner out with work function
Saturday--another work function
Sunday--football party

Sometimes I'm not sure why I even bother to make my meal calendar anymore. Gives me a sense of control in an uncontrollable life;)

The pancakes with bacon and fruit salad sounds gooood!!

I go through the same thing with the menus. If I include too many totally homemade type foods, that will be the week that something happens every day and doesn't give me time to cook. Then we end up eating take out! I can't seem to find that perfect balance between budget, homemade meals and quick fix items.

Sunday - Orzo with spinach, carmelized onions and blue cheese
Monday - Same as above, from leftovers
Tuesday - Tortilla soup
Wednesday - Make your own tacos
Thursday - Homemade pizza

I liked seeing other ideas! I want to try some of them like the pumpkin penne!

Went grocery shopping earlier:

Monday: Spaghetti, garlic bread, salad

Tuesday: Chicken Noodle, steamed peas, rolls

Wednesday: Chicken, Potato and Corn Chowder, rolls (just adding chicken to the left over chowder in the freezer)

All the chicken dishes comes from leg quarters being on sale. I boil the whole bag of chicken, split the meat and broth into packages for at least 4 meals and freeze or use over the week.

Did some major shopping today and tomorrow I have to cut, julienne and freeze 4 grocery bags of green pepper and red peppers, so you will see a pepper trend in upcoming menus...

Monday - Chicken sausage casserole with potatoes, onion, and :wizard: peppers. Sides: homemade applesauce, green beans with almonds.

Tuesday - Spaghetti with meatballs and leftover sausage in the sauce, garlic bread, salad.

Wednesday - chicken of some sort, not sure yet.

Thursday - BFD (breakfast for dinner) - pancakes, sausage, turkey bacon (cooking whole package, need left overs for another night), and hashbrown potatoes w/:wizard: peppers and onions.

4 grocery bags of peppers? That's a bunch!! Were they on sale?

I still have bell peppers from my garden in the freezer. I have found that I prefer freezing them whole. I just wash them and put a bunch in a gallon freezer bag. I don't get that pepper smell throughout my freezer that way. When I get ready to use one or more, I just take out what I need and run it under some hot water to thaw enough to cut.
