It's past lunchtime, but this is my new favorite!
a quesadilla with whole-wheat tortillas, black beans, shredded carrot, scallions, tomatoes. I put in a small amount of reduced fat cheddar and have plenty of salsa. Yummy, and very filling.

I also eat a lot of quesadillas when I'm watching what I eat. I use FF or reduced fat cheese - and add various things. Sometimes just the cheese and some homemade gaucamole - YUMMY
Sounds good! I will have to try, w/o the beans though.
I forget what I ended up having yesterday. I need some need tricks for lunch to keep me honest. I love the Lean Cuisine meals and I am out right now. That is why I posted yesterday, since looking into the frig is so hard somedays to stay honest.
