What's for dinner?

Tonight....too pooped out from work to cook fancy so we did the

Breakfast for dinner thing....sausage links, hashed browns, eggs and toast. It was very satisfying....;)

Would you mind sharing the recipe for your enchiladas? These are my absolute favorite when I go out for Mexican but I'd love to be able to make them at home! Thanks!

Saturday--grilled cheeseburgers, fries and baked beans
Sunday (tonight) -- grilled pork chops, baked potatoes, tossed salad, left over baked beans.
Mon, Tues & Wed -- no clue....looking for suggestions. Bucky Larue....your suggestion for Shrimp Scampi sounds REALLY good. Do you make your own from scratch or buy it already made? Shrimp faijitas sound really good too. Actually SHRIMP anything sounds really good!! :>)

Honey Pot, I have a GREAT recipe for chicken enchiladas if you're interested. Just PM or post here and I'll share.

Hmmm....

Friday we went out to dinner before going to the play at the high school

Saturday DD & I baked all day, she headed for theater and I honestly can not remember what DH and I ate when he stumbled in from a long day at work but we did eat something.

Sunday - made a pot of chili and threw the ingredients for a loaf of bread in the bread maker.

Tonight - I have NO IDEA! We'll all dash in between 5 & 5:30 and need to be turned around by 7 for evening activities.

Tuesday?
Wednesday? probably subs!

Thursday - THANKSGIVING! the usual with all the trimmings.

Friday - Thanksgiving leftovers!

Well yesterday was Thanksgiving dinner at my MIL's. Whew! Let's just say we're all 'thankful' we don't have to do that for another year! Cooking is not among her talents, to say the least...

Tonight will be baked potatoes will lots of toppings to choose from. Broccoli and cheese with bacon bits is my favorite!

Tomorrow will be spaghetti and meat sauce with salad.

Wednesday will probably be pizza delivery while I am getting everything ready for our real T-day.

Thursday will be turkey, cornbread dressing, mashed potatoes, gravy, sweet potatoes, greenbean casserole, cranberry salad, rolls, cheesecake and pecan pie. I can't wait!

I am starting to see a pattern with the brownines, especially when I am not fond of chocolate. Must be that time of year. :rotfl:
 
Had I read better I would have read what was planed for the current week.

I usually fly by the seat of my pants, but you have me thinking.

Monday Baked potatoes with assorted toppings (broccoli, cheese, mushrooms, sour cream, chili)

Tuesday cornbread casserole

Wednesday tomato soup and grilled cheese sanwiches with roasted carrots

Thursday Turkey, ham, sweet potatoe custrad, mashed potatoes, green bean casserole, vegtable stuffing, corn, broccoli casserole, deviled eggs, cranberry sauce, brown bread, biscuits, beer battered shrimp, pumpkin pie, pecan, pie, apple pie, cranber/mincemeat cheesy squares, carrot cake

Friday Leftovers (please)

Saturday eggplant parmigana, lasagna, salad and garlic bread

Sunday (open for suggestions)

Here's the recipe I use for chicken enchiladas. I hope you enjoy it.

1 pkg skinless & boneless chicken breasts, cooked and shredded
1 can cream of chicken soup
1 can cream of mushroom soup
small tub of sour cream
2 - 3 C shredded cheddar cheese
2 - 3 c. shredded mozzarella cheese
1 med onion, chopped
1 pkg (10) soft flour tortillas

Boil chicken, cool & shred to bite size pieces. In large mixing bowl combine chopped onion, shredded chicken and 1 cup of both cheeses. In separate saucepan combine soups and sour cream and bring to small boil. Stir so it doesn't scorch. Spray Pam in a large cake pan or baking dish (13 x 9). Spoon chicken and cheese mixture into tortilla shell and roll like a burrito. Continue to do this until all shells or chicken/cheese has been used and packed into the pan. It will take several times to figure out how much is right and what works. If there are leftover shells, it's ok. If there is leftover chicken, just sprinkle on top. No PROBLEM! When used, pour the sour cream and soup mixture over the top of the shells. Then sprinkle remaining cheeses over the sauce. Cover w/foil and bake 25-30 mins in 350 degree oven.

You can change this recipe anyway you want. If you want to add peppers or mushrooms or whatever else you like, just roll 'em up! If you want more cheese add it! Use fat free sour cream and soups if you like. It's a really easy to work w/recipe and can be changed to suit your tastes.
