What's for dinner? Was it "budget"?

I went to the grocery store today and along with what is in my pantry, I spent $41!!:thumbsup2 This doesnt count lunches so I will make another trip on Sunday afternoon to get lunch meat, bread, frozen meals, etc.

Tonight is spaghetti sauce , garlic bread and a Caesar salad. I think I did the price breakdown yesterday but I added a salad - lettuce was $1 and dressing is in the fridge already. I may add that extra tomato I bought (0.40) and some cucumber also (0.35)
 
tonight was:
mixed veggies ~ .30 for steamfresh
pasta ~ free
butter/garlic sauce ~ .10 for the butter, garlic was free
steaks w/ BBQ sauce in the slow cooker ~ $0 for the steaks (gift from Christmas), $0 for BBQ

so .40 and dinner for 5, plus enough leftover noodles for another family meal
 
DS8 and I ended up having baked potatoes and salad. I had leftover chili in the freezer that I thawed, warmed, and spooned over my potato.

I was going to do fajitas tomorrow, but I forgot that I'm going to a cooking class at my friends church. $5 to learn some new recipes, eat, and bring home leftovers. We went a few months ago and it was GREAT! So for my DH and boys, they'll have hot dogs tomorrow night. I'll make the fajitas on Friday night, and fajita salads on Saturday night.
 
I am planning on making turkey ham ($1.50); au gratin potatoes ($2); green beans or broccoli for me (whatever I prefer when I am cooking) ($0.50); drinks ($0.50). . .

Total: $4.50 for 2 adult dinners and 1 adult lunch (so, $1.50 per serving).

Actually going to make that tomorrow. . .

Tonight we had gnocchi ($3)
sundried tomato sauce ($1)
green beans ($0.50)
drinks ($0.50)
$5 total ($1.67 a serving)
 

Decided to make something simple and easy....

Bacon and Corn Pudding

You must like corn as this is the main ingredient...I could use this dish as a side to pork chops or the like....we had it as our main meal. First time I made this too. I'd add some cheese to it next time on the top....anyway...

12 slices bacon $2.99 (roughly)
1/2 Chopped Onion .68
1/2 chopped green pepper 1.22
5 tbsp butter (CHEAP maybe .50)
1/3 cup flower (maybe .10 worth)
1 tsp salt and pepper(worth nothing)
2 cups sour cream (2.29)
2 bags sweet corn frozen (3.50)
2 cans of cream of corn ($2)

Grand total of about $13.


Wife and I had 2 servings each and there is over 1/2 left still.....
so roughly 8 servings, at $1.62 a serving.

And if we can take pictures of our Disney dining review food....why not our own...here yah go....

We had deli fried chicken tonight (I was out shopping all day and it was just one of those sorts of night), and we also had great big huge artichokes. They were on sale at the store for $2 each, not bad for big fresh 'chokes. Boiled them in water with herbs, garlic, and lemon juice. Served them with choice of melted garlic butter or ranch dressing for dipping. The kids LOVE artichokes - so do I - and we hadn't had them in such a long time.. it was quite the treat.
 
Got home a little late tonight and ended up boiling a 10 cent pack of ramen. I think that qualifies for 'budget'.

Yum! We love artichokes! $2 a piece is great. My kids love melted butter or Dijon vinegrette for dipping. i fond artichokes at Stop and Shop for 2 for $3.
 
Tonight is chicken/veggie noodle bowls with egg rolls.

2 chicken breasts bought on sale - 1.00
frozen veggies left over from the other night - 1.50 (carrots and sugar snap peas)
3 bags Ramen noodles - 0.60
1 box frozen egg rolls - 1.50
orange slices (1/2 HUGE orange I bought yesterday) - 0.80

total for 3 - 5.40 and I'm sure we will have some leftovers for lunch the next day.
 
Miliki2, the corn pudding with bacon looks good. I've never seen corn pudding with bacon.

Tonight I think we'll have a pre-made chicken parmesian, with garlic bread and fruit for dessert. I'm sick and I don't feel like cooking. The chicken parmesian is really good (Michael Angelo's) $10 for 2 packages, so it's still budget. I may roast some mini-carrots as a side.
 
Slowcooker turkey stew?

I don't know what to call it...

turkey cutles from grocery $4
2 cans golden mushroom soup $2
Leftover frozen veggies $.50
Egg Noodles $1
Water [free]

Cook egg noodles separately. Throw rest in slow cooker early afternoon and delicious by supper.

Feeds 5 for $7.50
 
Not budget, but cooked a bag of Parmesan shrimp from schwans and added broccoli, then threw in some cooked angel hair pasta:cloud9:

Mix up a couple of packages of Au Jus in the crockpot, add a couple of lbs of stew meat. Peel and dice some potatoes, add them to the mix along with a bag of baby carrots. If you would like, also add a bag of peas and baby pearl onions.
Cook all day on low, then about an hour before dinner, thicken it up with a cornstarch slurry. Serve with rolls and butter.

Tonight is Vienna Hot dogs and sausages on the grill with homemade mac and cheese on the side.

it ended up being a topsy turvy night too so I got 2 Subway foot longs on the way home and we added veggies.
