What's for dinner? Was it "budget"?

Last night was Lazy Lasagne..

1 package penne/rigati $1.00
1 jar sauce $1.00
1/2 container of ricotta $1.75
egg and seasoning $.25
Garlic Bread 1.00

$5.00 - no extra veggies though... Enough for 4 plus leftovers..

I have leftover in the fridge but not really feeling like them tonight so I think I will look through the thread but its getting down to the wire for me...;)
 
oh so much rides on what my husband feels like. If he is up to it I may just grab some food to go or if he doesn't it will probably be cheeseburgers and I will fancy them up with grilled onions as we all love them. Ohhh and maybe fried taters. Oh wait it's Thursday upside down night...shhh...nobody tell my kids!!:rotfl2:
 
Adventure night! :upsidedow Seafood ravioli! Why did I buy it? Just tired of the same old thing. Now it's not sounding too good. Here's hoping! So. Gonna put 3 cheese alfredo sauce over it. I guess we'll have some peas. Maybe a fruit plate for dessert.

* I've been reading and taking notes from the book, "Deceptively Delicious". Not bad! I just checked it out from the library. I think I'm going to try some recipes. If they turn out for my family, I'll let you guys know.
 

Tonight is Thai Pineapple Chicken. Not exactly budget, but good! I wonder why boneless skinless chicken thighs cost more than the boneless skinless chicken breasts? Anyway, that's what the recipe calls for, so that's what I bought. Also needed fresh pineapple and coconut milk. I forgot to buy a red pepper so I'm omitting that. We're also having jasmine rice, and coconut ginger noodles for DH and I.
 
I have to laugh because my friend and I always argue about this one. I call pigs in the blanket, hamburger rolled up in cabbage with tomato sauce around it. She calls them cabbage rolls and pancakes with sausage rolled up pigs in the blanket. Lots of different pigs in the blankets..

I'm with your friend on this, but I'm part Polish so it is Gallumpkis instead of cabbage rolls. I should probably make some before the weather warms up.
 
We had chili dogs (using leftover chili), Pasta Roni (b1g1 free) and corn on the cob (sale 10 for 1.00). Total for the meal was less than $5.00. Not healthy but satisfying! We were in a rush since I worked 12 hours today. :(
 
Tonight was tuna casserole:

1 1/2 c. barilla plus elbows .50 cents
2 c. mixed frozen veggies .75 cents
2 cans tuna $1.25
1 can low-fat cream of mushroom .80 cents
1 c. low-fat shredded sharp cheddar .80 cents

Total = $4.10 Not bad, but no leftovers.
 
Meatloaf ($2.50 - bought 95/5 ground beef last month, and split it into 2 meatloaf's and a meal of meatballs. . . the meat was about $8 . . . ).
Fresh Mashed Potatoes ($1, about 1/4 of the bag)
White Gravy - $2 (but should have quite a bit left over for biscuits and gravy on the weekend. . . )
Frozen Broccoli ($0.50)
Drinks ($0.50)
TOTAL: $6.50 (3 adult servings (2 dinners, 1 lunch), so $2.17 a serving
 
last night I ended up picking up food to go....Qdoba nachos....$16 for the 4 of us...not the cheapest but healthier than pizza.


Tonight is probably the cheeseburgers I talked about last night...got lots of veggies for sides.
 
I think tonight I'm going to make those barley stuffed peppers that someone posted earlier :) The boys won't eat them so I'll probably just do scrambled eggs or chicken nuggets for them.
 
We had hamburger helper last night with baked yams.

ground beef - $3
hambuger helper mix - free (thanks to DBF's food conference)
Yams - $3 (don't know for sure, need to check receipt)

There are leftovers for a meal for me or a snack for DBF (He is the reason that Taco Bell developed "4th meal")
 
Tonight is chicken parm with pasta. I always slice my chicken breasts in half because I hate when they are fat (I like them thin!!), so I'll use three, and that will give me 6. 1.99/lb.

I have a half jar of spaghetti sauce in the fridge (it was .99 on sale)

I'll bread them with bread crumbs and parm cheese (.50?)

Top with Mozzarella (1.00)

and serve with pasta (.50)

So, like $4.50? Not bad!

The seafood ravioli was a hit for all but one. So not a total loss. Maybe if I had used a marinara sauce. (I liked it!)

Tonight it's pizza! Looking forward to it.
 
We're having roasted drumsticks (1.99), frozen veggie mix (2.00) and mashed potatoes (probably around 1.50). Oranges (.50) for dessert.

Total: around $6.00 for 3 people

bottle of Jack Daniels BBQ sauce $1.50
*all have been cooking in the crockpot all day *

homemade cornbread (well from a package;) ) .50
bag of frozen brocolli .99
 
Jambalaya..The chicken was on sale 4.00 for a pack, a pack of smoked sausage 2.00 and two boxes of the mix 4.00 so about 10.00 for dinner and it will make a big pot.
 
My husband took my son to the food court at the mall.

One of my daughters has a nasty stomach bug, so we stayed home. I had PB&J. It's one of my favorite meals :)
