What's for dinner? Was it "budget"?

Tonight is fried rice. I am working through a pork roast that I cooked in the crock pot and shredded that I paid $3.50 for.

I used 2 eggs (17 cents), a couple of baby cut carrots (10 cents), 1/3 bag of peas (33 cents), a little bit of that pork (50 cents maybe, prob less), rice of course (12 cents), 5 spice (?)and stir fry sauce sauce (?). Two huge servings for $1.12. :cool1:


there's stir fry sauce?? I've always just used soy sauce:confused3 I gotta find me some stir fry sauce:goodvibes
 
Stuffed baked potatoes, sloppy joes, and cottage cheese. I guess most of that is budget, except cottage cheese is sort of expensive lately. Oh well, it's an infrequent treat for us. Hmmm, nothing green and that's bad. Oh well, I also baked a cake that had pineapple in it. So at least we got a fruit. :rotfl: I was wanting something sweet today.
 
Today I made 'clean out the fridge' veggie soup...
sauted some onion, 1/2 of red pepper, celery, leftovers from the bag of baby carrots chopped up that didn't get finished..added 1 can of V8, box of chicken broth, 1 small can of tomato sauce, a couple cups of water and can of white beans...once that comes to a boil i add whatever open bags of frozen veggies are left in the freezer...tonight it was green beans & butternut squash...simmered for a few hours. I grate a little cheese on the bowls before serving..perfect for a cold night.:thumbsup2
This will feed us tonight and we will have plenty of leftovers for the weekend.


My kids call this type of recipe "icebox soup", There was a book my parents used to read them when they were little about Grandpa's icebox soup! The only trouble with this is, you can never really duplicate it if you make a great batch of soup!

One of those recipes that I know the Picky People in my house (read: everyone but me LOL) wouldn't eat though. SIGH.
Maybe one of these days I will make it for me and just have LOTS of leftovers. :idea:

It was REALLY good!! The pineapple I bought was a little on the sour side, but all in all, a really good dish! My picky one ate the chicken without the sauce, plain Jasmine rice, and uncooked pineapple.

I had leftover coconut milk, so I just made a batch of rice pudding, using up the coconut milk along with 1% milk. Just gave it a taste, and OMG....yummy!!!
 

:thumbsup2 Tonight we had frozen pizza for dinner! Meatlovers for DH and I, Cheese for the boys! Not as frugel as making it from scratch, but cheaper than Take Out or from Pizza Hut! We used to order outalmost every Friday after a loong work week, so we started doing this to save some $$...:wizard:

Tonight we are having french toast and sausage for our cheap meal.

We do this quite a bit! Breakfast For Dinner Night!This si great -especially on nights where the kids ave sports, or e have meetings, whatever gets us home late. And the Kids love it!! Its on list for ou meals this week

Tonight we had sloppy joes

We had sloppy joes as well this week, I turned the left overs into Tacos. ...

Tonight DH and I had ravioli for dinner and salad.

We will have Spaghetti or Ravioli with meatsauce this weekend, usng the leftover leftover Taco meat... this is a great meal for those nights that you forget to take something outta the freezer!!

I'll have to remember the breakfast burritos for next Thursday....that's become upside down night....and that sounds yummy!!
Great idea! I will have to keep this in mind for my next shopping trip!!

This week we also did a small roasted chicken. I will have gotten 3 meals out of it this week before all is said and done. :woohoo: and 3 out of a night of Ground beef...

Mon Night 1 - Roast chicken dinner
tues Night 2 - Sloppy Joes
Wed Night 3 - Chicken Stew (boiled and picked carcus from nigh1) with dumplings
Ths Night 4 - Taco (left over Sloppy Joe meat, added taco mix and addtitional 3/4lb of meat from freezer)
Fri night 5 - Pizza
Sat Night 6 - Chicken and Broccoli caserole (last of chick from Night 1)
Sun Night 7 - Spaghetti with Meatsauce (last of leftovers from SJ on night 2)
Mon Night 8 - Breakfast for Dinner!
Tues - back to the store I go!

This is called Leftover Stew in our house. Dh and I had a lot of it when we were first married and when DS8 was a baby. Its still good and enjoyable to make!A great feeling to use up all the leftovers and not waste um! :thumbsup2

tuna noodle casserole was tonight because we couldn't agree on anything else

mexican last night....probably our most expensive dinner this week about $8....love knowing that!!

TOTAL: $4.80 (and DH gets dinner today and lunch tomorrow, and I will get at least that, if not another lunch. . . so pretty good for 4-5 adult servings in expensive DC).

I'm sure this is not healthy, but I got $.88 frozen pizzas at WalMart today.

Cheap? Yes. Tasty? Yes. Salty and bad for my blood pressure? YES!

I'm also weaning myself off of the commissary for lunch at work. I've been spending at least $10 per day for lunch. That's $50/week, $200 per month!!

I found 4/$5 soup at Ralph's so I'm having that this week.

Tonight will be either Turkey Tenderloin and mashed potatoes or Breakfast for Dinner. DH will be eating later than the rest of us, and I am thinking that the turkey tenderloin would be easier to reheat. Thoughts?
 
To be honest, I just play it by ear. However I'll try to explain.

Shredded pork roast
Diced onion
minced garlic
can of green chile (4 oz) diced.
flour tortillas
largish Can of Stokes Green chile sauce (or other green chili sauce)
black beans drained(new addition...exta fiber)
Cheddar cheese (or whatever you like)

Lettuce
Tomato
More onion not cooked
Sour cream
Salsa
Saute onion and garlic in EVOO, add beans (drained) green chili and eventually pork. Put a little Chile sauce in them if you want to. Heat till Warm. Place in slightly warmed tortillas (easier to roll) and roll them up burrito style. You can put cheese inside them if you choose too. Put burritos in a sprayed casserole dish and cover with remaining sauce and cheddar cheese. Bake at 350 about 20 minutes or until melted and bubbly!

Serve covered with lettuce, tomato, onion, sour cream and salsa.



Sorry, I hope that's clear. I've never made my own green chili sauce, but eventually I hope too. You could probably use green chili enchilada sauce if you can't find stokes, or equivalent. I know my stores in TX have LOTS of different sauce choices.

Just arranged everything so tonight we are having turkey ham steaks (I buy the turkey ham and cut into steak-size) cooking in worcheshire sauce, pineapple juice and a few pineapple chunks, a very little soy sauce, and brown sugar. Basmati rice cooked on low fat/sodium chicken broth and frozen/garden green beans, and homeade applesauce.

Ham 2.75
Rice .50
pineapple (leftover)
condiments .25
green beans (free - frozen from last summers garden - already paid for itself)
applesauce 1.50

$5.50 - we will have extra turkey ham that I wont even cook and leftover rice for a lunch also.

Tonight is pot roast slow cooked in a package of au jus seasoning ($6 total)
onion rings from our Angel Food Ministries box....(about 50 cents guesstimating)
salad (50 cents of the $2 bag at Costcot)

hopefully there is enough of the pot roast left for sandwiches tomorrow.

I know that the meat at Costco is a bit more expensive but in the long run it is cheaper for us because we actually eat it.
 
Tonight is Breakfast Burritos.

'fried' potatoes mixed in with scrambled eggs, flour tortillas, cheddar cheese, salsa and sour cream with chopped fruit on the side. Simple and yummy!
 
Today we are eating "fancier" food - so costs more than a budget meal - BUT for me ANY meal I eat at home/no take out = budget :)

Small Salmon serving for me (DH is allergic to fish) ~$1
Italian Spicy Sausage for DH ~$2
Potato Gnocchi ~$4
Sun dried tomato Alfredo sauce ~$2

$9 total (two adult dinners, two adult lunches - except I will need to add a protein for my lunch, prolly just some frozen chicken I have). WAYYY cheaper than eating out :)
 
I made a Mexican pizza tonight. It's kind of a knock off of Taco Bell's Mexican pizza.

Mexican Pizza

2 Large flour tortillas
About 1 lb of hamburger
(I didn't use the entire lb. of hamburger mixture. It was closer to about 2/3rds.)
taco seasoning packet
1 can refried beans
about half a cup of shredded cheese
about half a container of salsa
1 large tomato diced
about 1/2 a container of reduced fat sour cream

Preheat oven to 350 degrees. Prepare hamburger as directed on the taco seasoning packet, set aside. Place 1 large flour tortilla on a cookie sheet (I cover mine with aluminum foil first), spread a generous layer of refried beans over the tortilla, then spread a generous layer of the taco meat over the refried beans. Place large flour tortilla over the layer of taco meat. Spread salsa over the top of the tortilla. Then spread shredded cheese (I used what I had on hand cheddar and mozzerella), place diced tomato evenly over the top of the cheese. Place Mexican pizza in oven for approx. 20-25 min. or until cheese is bubbly. Sour cream optional, but it's nice to put a dollup on each person's slice!

It doesn't take long to put together at all. It's really good! Next time I'll add some sliced black olives and scallions. :)
 
Tonight is my weight watchers meeting so we are having Salads. We usually have salad night every couple weeks, I cook boneless chicken breasts cut them up. Then I put out a big bag of salad, Cheese, Those Chinese hard noodles and Carrots and such. The kids love making their own salads and they end up eating them very good. Yummy!! I don't know about budget it cost me 2.50 for the salad mix, 2.50 for the chicken, 2.00 for the cheese, 1.50 for the noodles and 2.00 for the dressing so about 10.50 for dinner not to bad for a family of 5 :love:
