roast pork loin with potatoes carrots and onions. It seemed cool out but by the time this thing got to baking I realized it's way too hot to have the oven going.

Realistically, just me and two-year old DD tonight, hubby is working, so I'll probably give her a PB&J, and go pick up some of my favorite eggrolls from a chinese place that I love.

I meant to throw one of those crockpot meals in, but time got away from me!

I love them too but not deep fried. It does a number on my stomach. We're having a hodge podge tonight. DH will be home just before I run out to a PTO meeting. I'm going to feed DD now and leave a plate of something for DH. I'll eat when I get home. I'll likely have cereal and yogurt .

Recipe for scallops, please? My fave seafood!

2 cups scallops
1 cup flour
1 tsp. salt
1 tsp. paprika
2 eggs
2 T. water
dry bread crumbs

Dry scallops. Mix flour, salt & paprika in one bowl. In second bowl, mix eggs and water. In third bowl, place bread crumbs.

Dip scallops in flour mix - then egg - then bread crumbs. Fry in hot oil (370 degrees - I use my Fry Daddy) for 2 minutes or nice and brown..

Then eat them all before someone else gets them!!

Let's see- we're having pork chops, green beans and a mixed field green salad with feta, almonds and dried cherries- tossed with raspberry vinagrette. I can hardly wait!
