Laura--Food seems to have helped Ross,
....though it could be the dayquil, he went to bed at 7:15, but with a belly full of rice and salmon....I also made a no bake cheesecake this afternoon that he ate a piece with crushed pineapple for dessert.
I do not expect much from him tomorrow, but he will make a show for the team at least.
Have a good evening all, and I will check back in tomorrow afternoon

I was so uncomfortable by yesterday that I posted on a Crohns support board about my symptoms and someone pointed me to check out GERD. Who would have thunk it? I see the GI week after next so it's going on my list of things to chat about. Thankfully GERD is easy enough to treat, just another pill to add to my routine

Bob chose salmon over steak tonight Strange for him. Anyway I was planning on cedar planked salmon, didn't realize I didn't have any. So we had apple wood smoked salmon with a honey balsamic glaze. I also made proscuitto wrapped asparagus. Both of these were Michael Chiarello recipes.
Here's the pic:
and the wine that was recommended to go with the poached egg/feta dish went even better with tonight's meal:
A lot like a Pinot Grigio but much less acidic.

Here's the Asparagus recipe:
Roasted Asparagus Bundles wrapped in Prosciutto with Seasoned Bread Crumbs
Recipe courtesy Michael Chiarello
Unsalted butter, for baking dish
1 large bunch asparagus, about 1 1/2 pounds, trimmed to even lengths and blanched for 4 minutes in boiling, salted water
Gray salt and freshly ground pepper
Seasoned bread crumbs, recipe follows
8 thin slices prosciutto
2 tablespoons extra-virgin olive oil
Preheat the oven to 400 degrees F.
Butter a shallow baking dish that is long enough to hold the asparagus. Season the asparagus with salt and pepper, to taste.
Divide the asparagus into 8 equal bundles. Arrange 2 slices of the prosciutto on a work surface so they slightly overlap each other. Place an asparagus bundle on top and roll up carefully in the prosciutto. Arrange in the prepared baking dish. Flatten the top of each bundle slightly and sprinkle with 1/4 of the seasoned bread crumbs. Drizzle with the olive oil.
Roast in the oven until heated through and crisp, about 10 minutes. Serve at once on a platter with the sliced ham.
Seasoned Bread Crumbs:
1 1/2 teaspoons extra-virgin olive oil
2 cloves minced garlic
1/4 cup fine dried bread crumbs
Pinch gray salt
Freshly ground pepper
1 tablespoon finely chopped fresh parsley leaves
1 teaspoon freshly grated lemon zest
1 tablespoon freshly grated Parmesan
To make the seasoned bread crumbs, heat the olive oil in a small skillet over medium-high heat until hot. Tilt the pan and then add the minced garlic and saute briefly until pale gold. Add the bread crumbs, season with salt and pepper, and lower the heat to medium. Cook, stirring occasionally, until the bread crumbs are toasted, about 3 minutes. Pour into a small bowl and add the parsley, lemon zest, and Parmesan. Toss well. (The crumbs keep, tightly sealed and refrigerated, for several days.)
Notes: I didn't use butter, just olive oil & I cooked them under the broiler until browned. Next time I would shorten the blanching time by about a minute. I think a thinner wrap of proscuitto over a larger section of the asparagus would be better. The two slices over the middle was a bit salty & then the ends tasted a little plain.

Kathy, Bob just saw Kyle's pic (again, he did see it in the paper) in your post.
He commented (again) that " Man, he has an excellent stretch and you can just tell the delivery is going to be good!" I don't know what all of that means, but apparently he thinks it's very very impressive!

I'm not sure what it all means but I know his coaches have always praised his form & technique when teaching others the proper way to pitch. He doesn't throw hard but he's got a lot of junk. I'm sure Bob will know what that means.
Your dinner looked fantastic, I'm going to have to try that asparagus recipe!! I noticed you said you had artichokes, I've been looking all over for them and can't find any good ones!
Johnny just went to pick up our take out from Tennou - Sushi, Squid salad, Teriyaki Beef & Shrimp and Tempura Shrimp & Veggies, can't wait!!!!

I had hot dogs and chocolate for dinner. 
I went to Bingo at my godsons school and they have these people who have a candy making business who come to all of the events there. I always have to get the caramel chocolate turtles which are actually made with a turtle mold and the inside is a caramel pecan. oh so good!
And I won a door prize!
A sample of Nexis shampoo and conditioner and a travel pack of bandaids! Not sure what that was about!

Good morning everyone!
WFD- Fried panko coated Mahi-Mahi, corn on the cob, and salad.
Panko Mahi Mahi Recipe
INGREDIENTS:
4 serving size Mahi mahi filets
Skinless/Boneless. Actually, any favorite white fish will do –
mahi mahi, ono, halibut, sole, snapper, tilapia... I don't recommend
red meat fish, such as ahi, for this style.
1/2 teaspoon salt
1/2 ground pepper
1/4 tsp. ground paprika or dry Cajun spice
1/2 c. all-purpose flour
2 eggs well beaten, in a shallow bowl
1+ cups panko bread crumbs
spread out on a platter or large dinner plate
1/4 cup Bertolli brand extra virgin olive oil
No, I don't own stock in Bertolli, it's just that quality olive oils have a higher
smoke temperature than the cheaper generic brands, and are healthier.
1 tablespoon pure sesame seed oil (not the blended crap)
Season both sides of the filets with the salt, pepper, and paprika. If you use a Cajun spice, remember that most brands all ready contain the salt and pepper. This is the step of the recipe that is really variable. You can substitute the red spices with any one of the following: dried tarragon flakes, dill flakes, onion powder, Mrs. Dash's. But some kind of spice is ncessary because panko is not flavored.
Lightly dust both sides of the filets with flour, then dip into the egg wash, then coat both sides with the panko flakes. If you're feeling decadent, you can add 1/3 cup of finely blended macadamia nuts to the panko.
Heat the oils in a fry pan. The amount of oil to use really depends on the size of your skillet. Remember that this is not supposed to be a deep fried recipe. The depth of the oil should be relatively shallow, but not so shallow that the skillet is dry when you flip the filets over. Oil should be hot, but not smoking. I use a very heavy cast iron skillet given to me by my father-in-law (nobody touches my cast iron skillets!), but any fry pan will work.
Depending on size of your skillet, place 2 to 4 filets in the hot oil and fry each side for about 3 minutes, or until the crust is golden and the fish is flaky.
Drain excess oil on paper towels.

Good Morning! A's team lost again...BUT he hit the ball twice but got out on first and the other was a fly caught by short stop...he's is improving over time!!!
They had opening day ceremonies last night too. He won a $50 cert to the sporting goods store. On a sad note, they had a tribute to our HS coach...he passed away in his sleep the night before. His son's threw out the first pitch. There was not a dry eye.

A has another game today (weather permitting) so I am making sloppy joes...not sure what else. I also have some chicken wings marinating in balsamic dressing. I think I'll make them with some awesome buffalo/garlic/parmesan sauce that I found.

I missed all of you yesterday, I am lost when I don't get to chat with everyone. I feel so good today, but I slept all afternoon and into the evening yesterday. Marisa is going to vacuum for me today so I am just going to relax and go visit my Aunt. She has had a few good days so that is nice.

Aimee- Gerd is no joke. It hurts and can cause trouble down the line. I hope that you are able to get it under control. I wonder if the stress you have been under has contributed to this, you have been running and have had so much controversy to deal with, you take it all to heart and want everything to work out. It is no wonder that your body is rebelling. Take care.
Those sweet potato fries look so good I have to go back and find the recipe. I would settle for a Liam's neighbor, and I would do the dishes for that food!

Yeah, the Michael John thing really gets me but I do not vote. I usually vote nearer to the end. I think we voted for blake in the finale about 200x's.
I wish I was as energentic as all of you think I am. I still have boxes of crap in my office and the spare room. I am trying though. I started doing some of the Flylady dot net stuff this past week and let me tell you, I feel a bit more organized or on top of things already. I really like the plan they have.

here is a photo of our dinner last night...I made fajitas-chicken and flank steak. John was very bad and ate almost all of that steak! I have lots of leftovers of everything else:
Becky - I think I could have made a pretty big dent in that steak myself - it looks sooooooo good!
I think I could do serious damage to the steak also we love our beef here.

I agree with Kat! That is exactly how I like steak but never seem to cook it that way.
