What's for Dinner Tonight? (recipe index in OP)

I have a different recipe for the Derby Pie...:confused3 here's mine, well actually it's Glynis's:

Derby Pie

1 unbaked 9 inch pie shell
1/2 c. flour
1 c. sugar
2 eggs, slightly beaten
1/2 c. butter, melted and cooled
1 c. chopped nuts (I like pecans)
1 c. chocolate chips
1 tsp. vanilla

Mix all ingredients together and pour into unbaked pie shell. bake 45-50 minutes at 350 until set. Serve warm with ice cream

Laura, Your Mom's shortcake sounds good! But your right, not fool-proof! The reason I started making the trifle to begin with, was trying to bake the angel food cake! What else do you do with a cake that won't come out of the pan?! ;)

I was planning on something Mexican tonight, but we'll probably just have leftover soup again. That recipe made a lot, even though I gave half of it away, I still have a lot left.
 
LiamsAunt ..I'm making broccoli and cheese soup..Mine doesn't sound as good..I'll go add tarragon..I don't have chicken stock or wine though and DD won't eat it with chicken stock

I spent the whole day reseaching programs for Jeremy's homeschooling..I ordered Rosetta Stone German, and I need to put my curriculum in writing to submit to the school department for approval..I've done this before but it's been a while

Some of you may remember Ed's been dealing with a lot of anxiety due to his illness..The doctor gave him a new medication for it today..He came out of the bedroom last night at 12 AM and sat out in the living room with me for 2 hours because the pounding in his chest was scaring the heck out of him..The dacron graft they put over his aorta thumps when the aortic valve clicks off of it, and sometimes it freaks him out.

I've got pork chops in the oven and Broccoli cheese soup on the stove
 
Kathy, That really stinks!!!! Sounds like a JPPD inside deal all right!:mad: Kyle wasn't ticketed though, was he? That should keep your insurance from going up or it going on his record. I know my insurance company paid for the accident I was in, without a question, which ticked me off! Bob just found out, that they didn't even request the accident report! :confused3

No he wasn't ticketed but I'm told the underwriting dept. will take into consideration his age and the fact that he's only been driving under a year so I'm assuming my premiums are going to go way up. I was just in the process of trying to switch insurance companies when this happened.:sad2:
 
Kathy Sorry I would fight that report. I would contact internal affairs and file a complaint,saying you believe the officer influenced the report.

I've decided to add salmon to the colcannon & soup leftovers for dinner. I think I'm going to pan-sear it & then top it with the Guinness & sugar bread dipping sauce.
 
I hope not for this weekend. They are callling for some snow. Nothing major but this time of year none is better.

I'm glad you found someone so quickly...and a fellow Disney fan as well! I'm sorry to hear about the problems with the insurance company though. I know it's tough, but I think you have to complain about the report. If the insurance company lowers Kyle's driver's rating, he will be dealing with that for years.

Jenny -- That pounding would scare me too. I wish you both strength to get through this.

At the store today, I bought a loaf of garlic bread to go with my spaghetti and meatballs. Normally, I would make my own, but in the interest of time, I thought it would be easier to just throw something in the oven to heat. It wasn't until I was making it that I read the ingredients, and it was loaded with all the terrible things (partially hydrogenated soybean oil, anyone??). I made it anyway, and served it. Liam's comment? "Mom, this garlic bread is GREAT!" :sad2:

I know it's tough, but I think you have to complain about the report. If the insurance company lowers Kyle's driver's rating, he will be dealing with that for years.

Under "normal circumstances" I would. But since Katrina EVERYTHING down here has changed. It would probably take 2 years for an investigation into the details of the report, if we were lucky to get an investigation at all. They're too busy down here dealing with the out of control murders and gang violence.:sad2:

Looks like he had some influence on how the report was written, Kyle is now at fault and he was hit in the rear.:confused3 My insurance company is telling me they know from conflicting statements given by the other guy that this at best is a 50/50 at fault case. I don't think I have it in me to fight this.:sad1:

We're going to Taco Bueno. I am tired and sore from working all day getting our new building ready for move in by Sunday and I couldn't even think about having to make up something tonight. Since I need more stuff at the office store, DH suggested we go for Bueno. You know I can't pass up that place! (see note above about crappy processed food :laughing: )

I have not even figured out what we are doing for Easter yet. I know we are staying home which is good since we are all sick now (Andrew will be by his Dad's until 6pm).

I think I'll just make a ham, ohana potatoes, curried sweet potatoes, corn and maybe that Derby pie.

Is there anything I am missing? What are all of you doing?

Poor Ed. This has got to be so tough, a new job and then feeling like this. I don't blame him for freaking out, that has got to be awful!

I have to hand it to you with homeschooling. My first husbands cousin home schooled all of her children and the time she put into this was incredible.

I agree. At least file a complaint so there is a record. I saw that the PD has a lot on their plate and will probably not want to deal with this but it is possible that Kyle will end up paying for this and that is not right.

Nancy -- I have been meaning to ask how your night with Timmy went. Wasn't that earlier this week? If you mentioned it already, I apologize. I must have missed it. I hope he is doing well.

Laura- it went so well. I had to look twice at him, he looks just like Chris now, and he sounds like him as well. He is a Corporal now and was one of four men to stay in this unit. He is going to go for additional training and will then train others. He drives an MRAP and that thing is big! He told us he is the lead vehicle and the commander (I think) is behind him. The Commander gave him a letter stating that he always felt that they were well served wen he saw Timmy was in front.

He was not doing well in school and I think had he not enlisted he would not have graduated. Then at boot camp he was with a tough bunch but made some very good choices and his path has been blessed. He told Buddy that he never thought that he would be taking college classes after all he did to stay out of school. I know that there are those who feel that the Military is not the best place for a young person but I believe that in Timmy's case he has found his niche. Buddy thinks that he needed the structure and the sense that he is one of a real group. He used to tag with me and always was under Buddy's feet but for a while he refused to see his Mom or any of us, (divorce and nasty ex) but somehow he is back and seems to be so grounded.

He did tell us how they ended up frying the Kuerig but said that they had plenty of food and the goodies from home were shared. He said there was always something good someone had. He also was trying the local food and said it was good. This is the second most picky eater I know, his brother was the first.

He is heading down towards Virginia to see Chris, he cannot get away from his base, and then he is going to watch Kim play. She is in tournaments and doing well. Debbie is one of the coaches so he can see them all.

Buddy was shocked that the meal was Costco. I just cannot get him to understand that my sister cannot cook. She is not good at heating things up either so this was a treat for Timmy. We can always gage when they boys are really hungry because they will say that they are looking forward to Mom's cooking :lmao:, (but then Chris will ask Marisa who made something before he eats it) apparently he likes some of his Aunties cooking :rolleyes1

Oh well I have definitely talked too much but I am so proud of my tqo Marines :thumbsup2
