Tonight is pork tenderloin with pesto cream sauce. :thumbsup2 I LOVE this recipe, it is delish both with and without the pesto cream sauce.

Pork Tenderloin with Pesto Cream Sauce

2 ½ lbs pork tenderloin

For the marinade
4 cloves garlic
handful of basil
needles from a 4 inch sprig rosemary
2 tbsp balsamic vinegar
¼ cup red wine
3 tbsp water

For the pesto cream sauce
3 tbsp butter
1 shallot, diced
1 garlic, roasted
¼ cup red wine
juices from the roast pork
1 cup heavy cream
3 tbsp pesto

1. Puree the marinade ingredients in a food processor. Place the pork in a large bowl, cover with marinade. Toss to ensure pork is well-covered. Marinade pork in refrigerator for 6-8 hours.

2. Preheat oven to 375 degrees. Place pork in a large roasting pan and put in oven to roast. Roasting time for the pork will be about 20-30 minutes. Turn pork over after 10-12 minutes, and check at 20 minutes. Pork should be cooked to an internal temperature of 155-160 degrees, but should still have a bit of pinkness so that it’s tender. Note it will continue to cook while resting, so you want to take it out a bit before the optimal doneness is reached.

3. Remove pork from oven when done, place on serving platter and tent with aluminum. Reserve juices from roasting pan.

4. Make the pan sauce. Melt the butter in a skillet on medium heat. Add the shallot and sauté until it begins to soften. Squeeze out the roasted garlic and add to the pan along with the reserved juices. Stir in for about 2 minutes until the garlic becomes evenly distributed. Add the red wine and cook down for about 2-3 minutes. Remove from heat, stir in the cream and the pesto.

5. Thinly slice the pork, and serve with cream sauce. This recipe made enough extra sauce for potatoes and a 2nd night of pork chops!

It is seriously delicious. It's easily made w/a roast as well.

No snow day for me we did get around a foot of snow at least. Roads were crappy this morning hopefully this afternoon it will be better. Alex already had no school today.

Ok I have to share I was just reading in the paper how Mr Depp might be filming in a town near me. If that happens I'll be there trying to catch a glimpse.

Here is the chicken recipe.

Cooked chicken breast, cut into chunks
1 tbsp. butter
4 cloves garlic, minced
1 onion, chunked
1 russet potato, chunked
1/2 red bell pepper, chunked
1 carrot, peeled and thinly sliced
2 tbsp. curry powder
1 14 ounce can chicken stock
1 tbsp. hot sauce (use less if you don't like your food spicy!)
1/4 cup minced parsely
salt and pepper to taste
mango chutney, for serving
roti bread (or naan, etc.)

Melt the butter, then add the onion, garlic, and curry powder. Cook until the onion is soft. Add in the bell pepper, the potato, the carrot, and the chicken stock. If the stock does not cover the vegetables, add enough water to do so. Cook at a simmer until the vegetables are tender.

Stir in the chicken and hot sauce and cook gently until the chicken is heated through.

Wrap the roti mix in bread, and top with mango chutney to taste.

I changed tonight's dinner menu (again!) and now I am making a rib roast of pork...I think coated in mustard, plus asparagus and mashed potatoes.
 
Last night's pizza's were interesting! 2 of them turned out great! The last one stuck to the pizza paddle, it was really stuck! I had floured the paddle just like I did for the other two. Anyway, I will let y'all see the successes & the WTH is that thing!

Successful Pizza. Procuitto, garlic-olive oil sauce, veggies, black olives & feta cheese. ( I dry roasted the bellpeppers, baby bella mushrooms, onions & tomatoes before topping the pizza. )

And the OMG what is that! :eek: The dough was stuck & tearing, I tried to get the pizza off the paddle & it was just falling apart. So then I tried flipping half of it over & turn it into a giant calzone! Well with the pesto sauce I put in it oozing out, DH said it looked like some kind of ALIEN BLOB!:confused3 ;)

Yesterday was OK. I had my moments, basically at the cemetary. It was a little strange since Mom did not remember that yesterday was the day Dad died...

Yup, I'll keep him around. He's home early today, the roads are slick, so he wants me to stop cleaning. I am done but for my washing and I am not driving at all today. In our area the schools are hoping that it warms up, they waited a little too long to decide, I think and not buses should stay off the roads for a bit.DD doesn't put Kady on the bus and will pick her up, but I imagine that the drivers a bit worried.

Tonight, I'm taking my friends out to dinner for their birthdays. We will have Mexican and margharitas with churros for dessert. Yum!!! The men in my family will probably open a can of soup. They are cleaning tonight while I go out. Gotta love that!!!!!

I am having a "WTH can I make for dinner" moment. My FIL is visiting from out of town, and is staying with us. He doesn't like baked chicken :confused3 , which I make a lot of. He eats mostly Asian type food at home, and misses home cooking type food. I made beef stew last night, and am having a pot roast in a couple of days. I'm at a loss as to what I can make the other nights.

Any ideas?

Afternoon all----we are in for some pretty nasty weather around these parts as well........It is going to be snow/sleet starting in the next 1/2 hr that will change over to freezing rain into the morning hours......I HATE freezing rain......after our ice storm 10 yrs ago, I am leary of the ice....snow, now that is easy to deal with and for the most part drive in as it is in our blood.
The grocery store was a mad house this morning (I had to get some dogfood) between it being the 1st of the month, a storm coming and superbowl weekend.....:scared1:
The kids were sent home from school at noontime.

Nancy--I am glad you were able to have an afternoon/evening off yesterday...you did earn it!! I am sure it helped recharge you a bit as well.
Now on the shipping the mils off together....that is the best idea yet.....it would be sort of like putting a scorpion and a tarantula in box together....

Kat--My neighbor's 16yo daughter popped in a bit ago to bring me some muffins her and her mother made, and I was looking at the pics of Kyle....she saw him and her jaw dropped.....then she asked me who is that, and where does he live, lol......You can tell Kyle that he has the girls wanting him all the up in Maine as well as at home!! I have already been informed that if you ever get to Maine I am to let her know so she has time to get her hair done...goodness she left here with a blush to her face, :lmao:

I know these days are so rough for you right now, I understand and feel your pain....I am right there with you....call me if you need to talk..ANYTIME of the day....I don't sleep much anyways.

I am sure I missed a bunch of stuff....I was going back over everything when my neighbor stopped over and now I have to call to remind my gram to take her meds. I will try to get back on later to check what and who I missed.....
speaking of missing has anyone heard from Loreli(mermaid)....

How about hamburger steaks with smothered onions in brown gravy? I think a recipe was posted in the past few days on that.
 
Wendie, Please make sure you try to eat...I see that you are making chicken for the boys...you need to eat too...:hug:

I am sure I missed some stuff...I am in one of those moods where I start to straighten up, take a break, take a shower, take a break.

I am now in hockey research mode. As mentioned earlier, A is going to the Devils/Ranger game and we know nothing about hockey. Can anyone help? He is even going on a stadium tour and sitting in owner seats...:scared1: :)
