What's for Dinner Tonight? (recipe index in OP)

My Dad had 80 years of stuff in that house, still clearing some out. We had to rip up the carpets and re-do the floors, paint every inch and we're just now ready to think about showing it. We've had tons of calls so I don't think it'll be too long now.

Kathy, Well I'm sure that was a very emotionally difficult job as well. I'm glad for you that it's done now. :hug:

Wendie, So glad the Mini Chef made you smile! She's not always that cute though. In fact she's lying in bed right now punished. She stuck her tongue out at me because I wouldn't turn on the Disney Channel as soon as she walked in the house!:confused3

It snowing cats and dogs out, Maybe I'll get a snow day tomorrow. It's been snowing all day I think we have 3-4 inches already.
 
My day has been so-so.....kind of like a teeter-totter of emotions.....I won't bore you with all the details but as most of you know, my mother in law is not the most caring person......she has been a bit rude and cold today to me in an email, saying that I am being overdramatic and over the top with my emotions. She said that it isn't like my mother lived right up the road from me, and that when she loses her mother it will be even more painful as hers does.

My goodness, Wendie- a few months have not mellowed the Martyr-in-Law, I can see.:sad2: When my Memere passed away it was the same day as Buddy's sister wedding shower. I attended, as I was in the wedding. His Mother said "I'm sorry, now why didn't you make the fruit salad I asked for?" I wish I could send yours to visit her fir a few days, they would really like each other :scared:

Laura-- I am glad to hear you are feeling a bit better with things today, I can only imagine how overwhelming things must get while doing it on your own. You are an amazing mother and wife!! I think we as a society tend to forget to thank the families of our soldiers at times, you are making just as big of a sacrifice as dh is for all of us Americans. From the bottom of my heart Thank You! I am only 3hrs away, if there is anything I can ever do to lend a hand please let me know, you can always PM!!

Wendie, you are so sweet and just such a wonderful person. Thank you so much for your gratitude and concern. It really means a lot to me, in the midst of all you have been going through lately, that you are offering me help. If you are traveling three hours to see me, it's not to help, it's to eat!

Dinner tonight was good. I made the baby bok choy recipe I posted, again really yummy, a new fried rice, which I thought was really good, and a couple different types of eggrolls, including a vegetable one for me and a rather plain, chicken, carrot and snap peas one for the kids. The kids ate it...a recipe they like with different foods touching each other!! Woo-hoo!
 
Good evening!! We are finally back in our room.

I had lunch with Al Gore (and 2000 of my closest friends) today. SO GOOD.

THEN, I got to hear John Grisham speak/preach tonight. SO GOOD!!

Tomorrow night I get to hear Bill Clinton. I'm so excited about the great people I am getting to hear and be in the same room with. Running into lots of old classmates and friends, too, which is always good (esp since everyone in the world has heard about our church issues and are offering condolences!).

Tonight's dinner was steak again. A very yummy filet at Ted Montana's restaurant. If steak is on the menu, I just can't say no.

I changed plans agin and instead of making the tofu etc I told you about I decided to use the leftover chicken to make a caribbean chicken roti. I made the yellow rice and pigeon peas, but, as you may (or may not, new friends :) ) know, I cannot bake any bread at ALL! So, I thought, I would go "semi-homemade" and call up my favorite indian place for the roti bread, and then make the rest of the fillings.

Well, when you call your favorite restaurant, and they know your home number well enough to answer their business phone by saying "Hell-lo Miss Rebecca!" I knew they were going to be curious when I only ordered bread, as opposed to my usual (mumble mumble) order. And, indeed, they were!
They tried to thwart me also...I ordered roti bread but they gave me paratha (same bread, just layered on itself to make a thicker bread), and they chopped it into portion sizes instead of leaving it one big piece to make into a roti. Oh well! We made mini rotis and they tasted good. Here is a picture of the parts awaiting assembly. That's mango chutney in the small white bowl:

My husband decided yesterday to take today off. We are both really stressed right now and needed a day to ourselves. I think we are going out.

ETA: I am doing ok, I guess. Got a little icing on the cake Wednesday night, if you know what I mean. It didn't help my funk at all. But I did go to my chiropractor yesterday. *Note: he's more, much more, than a chiropractor. He's actually into natural medicine and holistic approaches to problems. A little crunchy, but not an adjust-and-go kind of chiropractor.* Anyway, he examined me and asked if I was stressed or going through some anxiety. I laughed and wanted to say, "No #&^$ Sherlock!" :lmao:He found where I was carrying my stress and tension and worked on me. Physically I feel soooooooooooooooooooooooooooo much better. After I see him (for stress) I find I have better coping skills. Not to mention I sleep a LOT better.

I will get through this hard time!

Sheryl, Alexis is a doll and your pasta and ravioli look awesome. If I lived closer, I'd be knocking on your door.

Andrew has no school today due to the weather. Freezing rain and since we are in the mountains, the roads are very bad. All I hear are salt trucks.

Yesterday was OK. I had my moments, basically at the cemetary. It was a little strange since Mom did not remember that yesterday was the day Dad died...

I have no idea what dinner will be. A may be going to the Devils game. I picked up market day yesterday so we may have the ham steaks I bought.

Have a great day all...I'll come back and try to get caught up.

She is usually really compliant & tries hard to do the right thing. That was a new one on me, a total shocker coming from her. She doesn't usually talk back & when she's corrected she cries & cries. Then you end up having to console her! Yesterday after sticking her tongue & getting put to bed she laid quiet for almost ten minutes before she started whining. And when I went in there she didn't give me the usual crying " I'm sooorrry." Very odd behavior for her.

My husband decided yesterday to take today off. We are both really stressed right now and needed a day to ourselves. I think we are going out.

Sorry you had such a rough time, I know how hard that is. :hug: I'm afraid I've only been to the cemetery maybe 3 or 4 times since my Dad's been gone over 10 years now. I just hate the cemetary, it's awful. I only go when my Mom specifically asks me to go with her.
