I have been lurking for quite some time after a long hiatus away..and i just want to say that recipes i have been seeing lately look amazing!!!!!
If its ok with everyone..i would love to contribute!

WFD tonight:
nothing too exciting, turkey burgers topped with avocado, prov. cheese and red onion..i think i will serve it with a salad and curly baked fries..mmmmm
I would love to try the greek tkey burger recipe i just read sometime..sounds great!!:thumbsup2

Thanks everyone for the kind words on my weight loss. We are determined to stay on track this time.

Here you go! These do not have a strong curry flavor at all. In fact, if you didn't know you added it, you would be trying to guess what the flavoring is.

To top it all off the motor in our furnace died last

Tom sounds like Kris on the whole salad bar.....Kris loads his greens with cheese, eggs and bacon and then tops it with 2 dressings.........the thing is he has no weight issue and there I am with my spinach and carrots and low fat dressing and my hips still get wider!!

Oh my, Wendie. So sorry about your furnace. I am sitting here with a chill that I cannot get rid of...I can't imagine no heat. Tom got made at me last night for turning it up to 72!

I would love to be able to eat like Kris at the salad bar...He is so lucky!

We have a tournament (in town) starting tomorrow thru Sunday. Kyle pulled a muscle in his back at practice yesterday and he's scheduled to pitch on Saturday, we'll see.

Hope he can relax and get better...he's the star, he has to play!

I'm glad it is not just me with the pre-shredded cheddar! I guess I won't buy it anymore.

I never knew pre shredded cheese had corn starch in it...hmm...makes me want your fondue again! :)

My BIL (Clark-Kent on the DIS) is coming over on Saturday to help us...I think they are going to start the shower and floor in the bathroom. We are at a stand still with the family room now since we are waiting on some plumbing and a permit.

WFD- tonight we order pizza! I have nothing in the house and it is our last official day of vacation.

I did not do any food porn from our trip. We spent day 3 of our vacation at Celebration Hospital. Luke had a 102 fever, it ended up being a double ear infection. Needless to say, we did not push him the remainder of our trip.

My parents were very surprised which made the whole trip worth it.

We did have some great meals. Top meal of the trip was Yak & Yeti, followed by Kona and LeCellier.

I am looking forward to all of us sleeping in our own beds tonight!

Ann, Welcome Home! Sorry to hear about your son being sick during your vacation. That's so sad, but glad you're parents had a good time.

You'll have to tell us more about Yak & Yeti. I had read some not great reviews on it, so I'd love to hear something good. I ducked in during our trip, just to see what it looked like. I thought the place was very neat looking & the menu looked yummy too!
 
I wanted to try Yak & Yeti too but was scared away from some of the reviews. I should just be brave enough and try it on my own. A few years ago we went the the Garden Grill cause everyone said wonderful place and the food was so good. I didn't care for the food the service was good but not the menu.
 
I will be having tomato soup, I have the flu and it is hard to eat or swallow with this sore throat.

Y'all aren't going to believe this, but I changed tonight's dinner again. I decided that the ravioli was too delicately flavored to go with italian sausage & decided to save it for a meatless Friday. Anyway, I decided to fix my Tuscan Bean's. Tonight I added mushrooms and capers to it.

Here's the recipe, it was on the old thread but since that's gone...

TUSCAN STYLE BEANS, PEPPERS & SAUSAGES

1lb sweet Italian sausage links
1 large red bell pepper sliced
1 large green or yellow bell pepper sliced
1 large onion sliced
2 medium sized zucchini halved & sliced
1 large portabello mushroom cap, diced into cubes or any type of mushroom sliced
1 tbsp minced garlic
1 to 2 tbsp olive oil
3 15-ounce cans beans, cannelini, great northern, red, or garbanzo, rinsed & drained
(I like to mix the different beans) or 1 lb cooked dry packaged beans rinsed & drained
1 14 ½ ounce can diced tomatoes, undrained
¼-1/2 cup dry red wine
salt, pepper, red pepper flakes
½ tsp dried oregano, ½ tsp dried sage
3 tbsp fresh basil, sliced reserve some for garnish
Shredded Parmesan Cheese

Cook sausage in cover skillet over medium heat with one fourth cup water until sausage is cooked through, about 5-8 minutes, uncover and continue cooking until sausage is browned. Remove from pan cool slightly, slice into half inch slices.

Cook onions, garlic in oil until softened add bell peppers, zucchini and mushrooms cook about another 2-3 minutes.

In oven safe covered skillet or casserole dish, combine all ingredients and bake at 350 degrees for 30 minutes. Uncover & bake until desired thickness. This can also be cooked on top of stove on low heat for 30 minutes, then removing cover for thickening.

Dish into bowl, garnish with fresh basil and shredded parmesan cheese.
Serve with garlic bread to soak up sauce.

Welcome back, Ann! So sorry your son was sick...my mom works with someone whose kids had the flu all week last week at Disney and they only made it to the parks one day! :sad2:

I did end up making pasta tonight. I made shells, a tomato sauce and I tossed it with ricotta and parmesan cheese. It was like having stuffed shells, but without the hassle. (The pic isn't the best...as Beck has mentioned, photographing tomato stuff is hard)

Gina, Here's a pic of tonight's Tuscan Beans. I don't worry about following the recipe exactly. I didn't have any zucchini so I added more mushrooms, which tonight was white button mushrooms. I threw in some capers & used white wine instead of red. DH noticed the difference & said it was one of the best.

Ann - welcome home! Sorry your baby was sick!!! Double ear infections are no fun at any time, but must be a real bummer at WDW.

Lauren - I'm so proud of you and your DH for the weight loss! You guys are fabulous!!!

Gina - It's nice to see you again! We've missed you!

Dinner tonight was Becky's Cheddar Cheese soup. It was amazing!!!!! The kids loved it, too! I served it with whole wheat rolls which were great for dipping!

Hope everyone is doing ok. I've been super busy with the kids school play, but after Saturday it's all over, and I can relax again!
 
Mostly in lurk mode right now...DH left town for his grandmother's funeral this morning and won't be back until Sat. We went out for pizza tonight and then we're heading to my parents for a couple nights. I'm not cut out for this single parent lifestyle!;)
