What's for Dinner Tonight? (recipe index in OP)

Hello all,:wave2: This thread is a great idea! Is it to late to join? I love to cook and try new recipes. Things have been kinda hectic lately so I have been preparing the same 'ol things over and over. Tonight's dinner is meatloaf, mashed potatoes, gravy, applesauce, and carrots.

Gretchen Hopefully they find a simple allergy to treat. I have a allergy to trees, grass, pollen. I still get to mow the grass. ;)
 
Laura the skating dress is fabulous! My sewing ability ends at buttons, so I am really jealous.

I don't sew the skating costumes...at least not yet. Right now it is more affordable to buy a plain dress and then I do the decorating. That involves more gluing than sewing. I do sew, but the skating costumes require particular fabric and a serge machine, which I bought months ago but is still sitting in my closet unopened. :laughing:

I hope Patrick made out okay at the allergist. Liam had the blood testing for his environmental allergies, but that was because he was having blood drawn for his food allergies. I think they normally do the scratch tests for environmental allergies, which aren't particularly painful, but it can be itchy.

Good for him! Did Kyle already apply to colleges and those are the ones scouting him, or are other colleges potentially interested in him? I have no clue how this works. :confused3 Also, that lemon spaghetti recipe looks great. I am definitely making that soon.

Aimee -- The dough I used was store-bought fresh dough, but I have a recipe I have used before that is reliable. I will post it separately.

Wendie -- So good to hear from you!! I have been thinking of you. I'm sorry to hear that Ross is sick. This has been a brutal winter for illness.

Caili returned to skating this afternoon for the first time in two weeks. She did fine. That meant dinner was a little rushed, so I made mac and cheese for the kids, and I had the gnocchi again, served over arugula and with a sauce of shallots, butter, chicken stock, wine, a little cream and chives. Here's the pic:

From the Book of Pizza
Basic Pizza Dough (makes 2 thin crust 12" pizzas)
1/2 c warm water (about 110 degrees)
2 tsp light brown sugar
2 packages dry yeast
4 c white flour (plus more for kneading surface)
1 tsp salt
3 tbsp olive oil (plus more for oiling bowl)
1 c warm water

Combine the 1/2 c water, brown sugar and yeast in a small bowl. Set aside for at least five minutes until frothy. (I put mine in an unheated oven.)
Sift the flour and salt into a large mixing bowl. Make a depression in the middle and add the olive oil and 1 c warm water. When the yeast mixture is ready, add to the middle. *
Dust your kneading surface with flour. Using your hands, combine ingredients then turn out on the floured surface.
Knead for 8-10 minutes until dough is smooth and elastic.
Rub a clean bowl with olive oil and place dough in it. Moisten top of dough with oil, cover with a clean cloth, and put in warm spot to rise for 1 1/2 hours.
Once rising is done, punch dough down and it is ready to use.

* If you have a stand mixer with a dough hook, you can mix and knead the dough in this...add flour if the dough is too sticky.

These colleges in Texas are ones that are interested in him. I know for a fact there is one (we've laughed about it) Catholic college that's tuition is through the roof high. These Catholic colleges normally don't give FULL scholarships, just small ones. Even Kyle said they can look all they want, I'm not going to make you mortgage the house for one semester.

All this scouting is nice but when it comes down to it, he'll go where he feels most comfortable at and that we feel is a good fit for him, and that could very well be a small local community college.

But I'm sure the remainder of this year is going to be a roller coaster ride for me!:guilty:

:lmao: :lmao: I can't blame the girl for positioning herself to transition from friend to dating friends to girlfriend. It's a time honored method of snagging the guy you want when he's on the rebound. This proves that she is also much smarter than Abi. She knew she needed to move quickly before some other girl snapped him up.

I read your post about his college decision and I keep thinking what a good son you have. That common sense will serve him well.

But don't count out the scholarship route. There are plenty of good baseball programs in the SEC. Who knows, maybe we can turn that Tiger into a Gamecock. ;)

Well, he still gets yard duty. His allergies are to mold, dust, and cedar tree pollen. Of course, he told my Mom he was allergic to "Cider Trees". :laughing: Right now we are trying some kind of nasal spray to treat the allergies with a return visit to the allergist in 2 weeks to re-evaluate.

LaurieG - Give up dear. You may never catch up. If I miss one day I feel like I missed a class in college - LOST. Just jump in and hang on. It's a fun ride.

Can you please post your spices etc for the turkey? I actually have some ground turkey in the fridge right now. I never know what to do with it when I buy it.

Sure can!! Though I must first say that I add different ones when the mood strikes...I also have no amounts as I just add until it looks good.

I had 2lbs of ground 99% ff turkey and put in 2 beaten eggs, salt and ground pepper of course, then did a salt free garlic and herb seasoning, herbs de provence(sp? don't feel like going to look at the jar, lol) some fresh garlic and then some good shakes of Emeril's seasoning. ( I bought a large jar at sam's so this goes in just about everything right now.....it is also really good on popcorn)
I formed into 10 patties then rubbed both sides with EVOO and broiled. soo yummy!!
Sometimes I use poultry seasoning as well.
 
Tonight I am making Rachael Ray's Not-sagna pasta toss. Yummy!

Good Morning everyone, I'm Baaack! On the advice of OKWMom I decided not to go back and start at page 1...well, not just yet anyway, I may poke around a bit though.
Dinner tonight at my house is chicken drumsticks (with skin removed) with EVOO and dry ranch dressing, they are sitting in the fridge marinating as we speak, not sure what we are having with it yet,:confused3 but it's a start!

We are having braised pork chops, white rice and broccoli. I may make the weight watchers zero point soup today. Its easy and we can eat all we want.

Well, dinner was a bust last night. My stupid train was about 45 minutes late showing up to the station so I did not get home until almost 8 PM. That meant panini by default. I did not even make a different kind, just the same old panini you must be tired of looking at by now. But, here's a picture anyway! :laughing:

Tonight I am definitely making the chicken sausage escarole dish. It's freezing here today so hopefully that will be comforting and warm us up.

Did everyone see the eclipse last night? we went out around 10:15 to take a look--it was beautiful! We could see Saturn too. I thought about taking pictues but it was so cold I did not know if my camera would like it.
 
Oh Gretchen, he's not good enough to even think SEC, believe me he'd kill to play for any SEC school but he's not in that elite group. With the summer team he'll be playing with he'll get a good look-see from all of them but I don't think in our wildest dreams that would happen.

Well, I'll be hoping for the best. You just never know what those scouts are looking for. And as long as he's happy and can get a degree in what he wants, it's a good school in my book.

Us too! Although I'm the only one eating the broccoli. Everyone else pushes it around their plates and pretends to eat it. :sad2:

We had a busy day yesterday and then a wake in the evening, then Buddy's aunt fell and broke both shoulders, poor thing! I am taking Kady to lunch with her Meme and then Buddy will take her and a friend to dinner and a movie. I have no idea where I will be...my Aunts or his if they need me.
 
It's storming here this morning and also raining in Houston. Kyle called and their first game this morning has been postponed.:sad2:

I've got lots of errands to run today so we'll get take-out, maybe Popeyes!

Dinner tonight was going to be the chilequiles lasagna that Lauren posted, but I just got reminded that it's Jacob's scout Blue and Gold banquet tonight. So, instead of cooking for my family, I have to make a dessert for 12. I think I'm getting off easily. I think I'll make Lindsay's vanilla rich chip cake. That should go over well!

It's snowing here, again. Not supposed to stick around, though. We'll see. I need to run errands, but hate to do it in the snow!

I'm giving my notice now that I won't be around much from tomorrow through Monday. I am attending a storytelling conference. It's something I do every February, and I love it!!! I get to listen to professional storytellers, and get ideas to help with our elementary school's story telling competition. Plus, I get to use my brain, and as a mother of 4, that is something that I don't get to do a whole lot!
