Hi:wave2: I saw that lime chicken tacos/nachos recipe and it does sound good...could someone tell me what page that was posted on? I forgot to write it down:laughing: Thanks:)

Here ya go:

Lime Chicken Tacos/Nachos

1 1/2 lb. boneless, skinless chicken breasts
3 Tbsp. fresh lime juice
1 Tbsp. chili powder
1 c. frozen corn
1 c. chunky salsa
12 flour tortillas, warmed
Sour cream, shredded lettuce, shredded cheese, optional

Place chicken in crock-pot. Combine lime juice and chili powder; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender. Remove chicken; cool slightly. Shred and return to crock-pot; stir in corn and salsa. Cover and cook on low for 30 minutes or until heated through. Serve in warm tortillas or over nacho chips.

I had a busy weekend and am just now getting back to normal. The chili party was a success. We decided to taste all of them before dumping them into one big pot. They were all very good. Mom made frozen mango pina coladas that were super yummy. A good time was had by all. :laughing:


WFD? I want to make the shrimp with bread crumbs someone made a little while ago, I think it was either Becky or Laura. I'll have to go search for the recipe. I hope I have everything I need.

Afternoon friends.....boy is it good to "see" all of you again...and who said you can't go home again?!!?

Sheryl is off in the land of ears I see, I hope they made out well getting to the race!!

I see that so many have been sick or taking care of little ones that are sick!! I hope by now everyone is on the mend!!

Ross has ended up with (even though he has all of his vaccines) a very minor case of the mumps...just enough to have puffy cheeks and a swollen salivary gland, that we never would have known about until he felt it himself. It will go away on his own...he isn't contagious and there is nothing to do as it is viral. I guess that there has been quite a few cases this winter of this in all areas of New England.

Kathy--what a weekend for you all!! I agree a stop for some liqued medicinal needs are in order!! Good thing we don't all live near the games...he would have a sideline of his WFD Auntie's cheering him on!! We are there with you in spirit!!!
I am so happy he is having such a wonderful Senior year!!

Gretchen--Let us know how Patrick makes out.

Lauren--I hear ya on A's eating.....Ross is the same way, the Dr's think he will be 6'4" as well...he will be 11 in May and he is 4'10"...the thing is I am only 4'11"...and everyone wonders why I wear a 3 inch heel in the snow.............here is a funny story on his eating...This fall we were getting groceries (remember this was during football and he was eating 2x what he normally eats) and I took him shopping with me(big mistake) as the groceries were going through, the bill was already over 200.00 the manager was bagging that day,and I turned to Ross and said, "what am I going to do when you are 16?" The manager pipes up..."Shop here I hope!!"


WFD--I am making ground turkey patties that I mix with an egg and various spices and broil up along with cous cous and roasted root veggies. I will make extras on the patties as Ross loves them cold the next day and he is home on school vacation this week.

Hello all,:wave2: This thread is a great idea! Is it to late to join? I love to cook and try new recipes. Things have been kinda hectic lately so I have been preparing the same 'ol things over and over. Tonight's dinner is meatloaf, mashed potatoes, gravy, applesauce, and carrots.

Yes, but without the vile, yucky, okra. :rotfl: Actually, it cooks til the liquid is gone. It isn't supposed to be soup-like. In SC, pilau is actually its own food group. You can make it with chicken, shrimp, and back bone. The hunters will also make dove or WARNING: GROSS OUT ALERT squirrel pilau.

The area of SC I live in was once the largest rice producer in the world. They actually exported rice. That was 150 to 200 years ago, but you know how long it takes for a tradition to die down here. The folks who live here still use rice more than pasta or potatoes. More history lesson than you wanted, but it's one of the few things I remember from our field trips in elementary school. And we're not going to talk about how long ago that was. :laughing:

Never too late! I think I was the latecomer on the old thread, but we have lots of new folks on this one. We have a great time together, and sometimes we even discuss dinner. ;) A great many of the ladies here are excellent cooks and I have gotten lots of yummy recipes from them. Please stick around and share.
 
Or Lauren's braised pork. That one is my husband's favorite. It takes about 5 - 10 minutes of prep and the remainder 35-45 minutes, you aren't doing a thing.

I have a question for the Moms/Nanas of allergy children. How was their screening? I ask because Patrick has an appointment this afternoon for his screening. What should I expect? How will he feel tonight/tomorrow, etc? We suspect environmental allergens, not food, if that helps. I would appreciate any and all advice. Thanks.

I have had allergy screening - it is usually done by blood test now, it's more accurate than skin and not itchy and miserable!

This looks better than Giada's lemon spaghetti, which I thought was okay but DH thought didn't have any flavor. I'll try this one!

You should try Kathy's Cajun pork tenderloin with garlic butter! It was so easy and yummy, and really didn't take long to cook at all! I posted the recipe a couple of pages ago, but if you can't find it, and want it, let me know!

Wendie's Ranch/Onion pork chops

4-6 boneless pork chops
1 pkg dried Ranch dressing
1 small can French's onions, crushed
2-3 tablespoons butter, melted

Preheat oven to 350. Dip chops in melted butter, then in ranch, then coat with crushed onions. Bake for 35-45 minutes or until done.

They are really good and I have done this with chicken too.

I think that's about it. Probably more on the jambalaya side than the gumbo side. And Kenny is a rice man too. He'd eat it every meal if he could. Preferrably with lots of gravy. How he has remained that size is simply beyond me. :confused3

Here is the recipe for Lauren's Braised Pork

6 pork chops
about 1 cup teriyaki sauce
about ¾ cup water
2 to 3 tablespoons honey mustard
¼ cup balsamic vinegar
garlic powder, dry mustard, crushed red pepper flakes (to taste)

In a hot pan, sear the pork on both sides for about 3 minutes each. Mix together all of the other ingredients and when pork is done searing, pour half of the liquid on the pork. Cover and simmer on low for about 45 minutes.

In a sauce pan, gently boil the remainder of the sauce (add whats left in the pan from braising the pork as well). Serve the sauce over the pork and rice.

Cajun Pork Tenderloin with Garlic Butter Sauce (I usually double the sauce)

Dry rub:
1 tsp. salt
1/2 tsp. cayenne pepper
4 tsp. paprika
1 tsp. black pepper
1 tsp. garlic powder


2 pork tenderloins
2 Tbsp. butter
1/2 tsp. garlic powder


In a small bowl combine dry rub. Rub this mixture into pork. Grill over med-high heat or roast in a 425 degree oven until internal temp is 160 degrees. Remove and let rest at least 10 minutes.

Melt butter in a small saucepan and add garlic powder. Slice pork on the bias and serve with garlic butter brushed on top.

On our old thread, which was locked due to being too long, we had an index of recipes and what page they were all on. Lindsay kept it updated and it had hundreds of recipes in it. She is going to work on trying to index the ones on here, and we've talked of ways to hold onto those recipes on the other thread and index them somehow.
