Yeah, It's Friday!!! :cool1:

Well, I have the in-laws arriving around noon today to spend a week with us. So, I think for dinner tonight I am going to make something a little more special. I'm going to head to the market for a rib roast and I'll also have a potato casserole, corn, and a green salad.

Well it is ds's 13 bday today..so we are having pizza and ice cream cake!
On sunday we are have a bbq with family.

We're meting some Disney friends tonight at an Italian fast food eatery. One couple just returned from WDW & the other couple from DL.

I have a roast in the crockpot. It's been in the freezer way too long, so the plan is to cook the daylights out of it & then shred it. I'll make it into BBQ later. (Did that for my parents who had a really dry roast recently & it was awesome!) We'll have either salads or maybe even corn again. It was soooo good last night! I love this time of year!
 
Baked parmesan chicken with warm apricot sauce, mashed potatoes, and creamed peas. It's my "lazy meal." It's really too hot to cook, but we've done take out the past 2 nights.

Seriously, I'd love to see your recipe for the parmesan chicken and apricot sauce! It sounds soooo yummy!
 
I was thinking the same thing about that "lazy meal". Unless that's a TV dinner...doesn't sound so lazy to me.

I think I'm just going to have keilbasa and kraft mac n' cheese.

I am planning on making blueberry pancakes for breakfast tomorrow. Hubby is working overnight tonight, so I'll make the pancakes when he gets home so he can have something to eat.
 
We had a tried and true lazy meal. Sliced leftover ham that I pulled out of the freezer and microwaved, mac and cheese from a box, canned green beans, and sliced watermelon. 10 minutes - if it takes more than that I consider it real cooking!

I keep most of these things handy and it's a lazy meal we have fairly often with a few variations. We should have a thread of lazy meals for days we have nothing planned or defrosted. Pantry to table in 15 minutes or less.

and then DH cam ehome telling me we were going out to eat with friends(Jenny2!)!
Well as I havent seen them in a while I sucked it up and ate again (ya like that was tough)
and I had baby back ribs at Longhorns mmmmmmmm

I made killer chile rellaneos from a recipe i found online. They turned out great.
