Will someone please explain the difference in 5 day park hopper and 5 day park hopper plus? Is the only difference is that "plus" includes being able to go to the water parks in addition to theme parks? So, hopper pass gets you unlimited visits (and park switching) between mgm, epcot, magic kingdom and animal kingdom?

That's correct. The park hopper is only for the 4 main parks, you can hop between them on the same day and it only counts as 1 day. The plus visits are for Water Parks, Wide World of Sports & Pleasure Island (per visit, not per day). If you would go to a water park & Pleasure Island in the same day, it would count as 2 plusses.
