Here's one I've made and love and it's easy.
Great with
a nice big basket 
.....
of fresh Crostini
SALSA DI PARMIGIANO
3 cloves garlic minced
1 lb Parmesan cheese (or any dry cheese), cut into cubes, about 1 inch
2 tablespoons basil chopped
2 tablespoons Italian parsley chopped
Pinch black ground pepper
3 scallion chopped
About a cup of extra virgin olive oil
Put garlic in food processor, give a quick pulse
Add cheese and pulse for a few seconds just to break up a bit
Add basil, parsley and scallion -- pulse
Add extra virgin olive oil and pulse for a few seconds
Spread on chicken or steak or tomatoes
or just about anything, or use as a dip
