OUR DINNER TONIGHT:

Seafood Ciopinno


24oz can diced tomatoes with basil and garlic
10 oz can of diced tomatoes with green chilies
8 oz can tomato sauce
2 tsp old bay (or to taste)
8 oz shrimp cleaned
8 oz scallops
1 can whole baby clams
4 pieces tilapia
1 piece halibut
1 tsp Italian seasoning
2 tsp minced garlic
2 bay leaves
2 tsp olive oil
2 bay leaves

In large frying pan or dutch oven place olive oil, garlic, and Italian seasoning. Simmer garlic until golden. Add in all tomatoes, sauce, bay leaves, old bay, clams, scallops, shrimp. Bring to boil and then reduce heat and simmer for 10 min. Place fish on top and cover and continue to simmer until fish is white and flaky. Flip fish with spatula so it does not break apart. Remove lid and let reduce about 10 min on simmer. Serve over linguini or rice.

My own Hot and Sour Soup.

For many years in the DC area I belonged to an organization whjich held a large Chjinese New Year's Party annually. It was a somewhat pot luck, but the requirement was you had to do your own cooking. The host provided the stove, oven & microwave. Most people had their ingredients prepared in advance or even poartially cooked as needed.

I made a turkey dish that is delicious. I bought a frozen Butterball white meat turkey breast roast, grilled it in extra-virgin olive oil in a fry pan just a few min then put it in a roasting pan with red potatoes and carrots. I made a sauce to baste the turkey with every 20 mins while it cooked. For that I combined more olive oil, parsley flakes, rosemary, thyme, lemon juice, dijon mustard and a little bit of butter in a saucepan for a few minutes. Turkey has to cook for at least 1 hour, 30 min. It's so good!

I just made this the other day while being snowed in here in lovely Jersey :) Had some more of it today and it is still just as good!!

Take about 2 lbs. of boneless, skinless chicken breasts and cut into strips (or just buy them that way!) Bread them with Italian bread crumbs. Lay them in a baking dish (13x9 is best) that has a little olive oil spread on the bottom.

Take a jar of roasted red peppers and drain them. If not already in strips, cut and then lay on top of the breaded chicken.

Drain a can of sliced white potatoes (I use 2) and make that the 3rd layer, covering the red peppers. Drizzle some olive oil on them, and a bit of salt and pepper.

Drain 2 cans of diced tomatoes (I like the garlic and oregano ones, but whatever you like!) and spoon them around the perimeter of the dish.

Bake at 375 for 30 minutes. Stir and bake for another 20-25 minutes. Let sit after removing from oven.

It is delicious!!!! The flavor the peppers give to the chicken and potatoes is just soooo good! I sometimes make this on a Sunday and then take it for my lunch to work all week. Works great for leftovers, such a great dish! Can't wait to eat the last of it tomorrow!! :thumbsup2

Ok, how insane that I'm a cheese freak and never thought of that!!! LOL I can guarantee you that next time - there will be cheese!! Haha!! Thanks for the great idea! I can eat cheese on just about anything :rotfl:
 
I've been strongly urged to post my crab rangoon recipe that I made today.
Hope you guys like it.

Crab Rangoon - inspired by the original Trader Vics recipe

1 package Wonton skins

1 small can crab meat or 8oz package of shredded Krab - chop very fine

1 - 8 oz package cream cheese

1 - tsp A-1 steak sauce (from the original Trader Vics recipe)

1 tsp garlic powder (I used dehydrated minced garlic)

1 tbsp honey

1 tbsp soy sauce

1/2 tsp white pepper​

Blend well - in a food processor makes it the smoothest, but I just mashed it up.

Drop a teaspoonful into the center of a wonton skin, wet the edges, fold into a triangle and seal, or pinch into a pouch - your choice.

Heat oil in a pan or deep fryer and slide gently into the oil. Turn when they float and reach desired color - being careful not to fry too long, or they will burst. Rangoons are done when they are a golden brown on both sides.

Here is a great soup recipe that I love to make when it is cold. I love recipes that require me to open cans and pour in a pot. On the plus side there is usually enough for another day depending on how many people you are feeding.

1 lb cooked ground lean beef (whichever is fine)
2 cans Veg All
2 cans Italian stewed tomatoes
1 can cream of potato soup
optional - apprx 1 cup of quick cooking barley (I use this to thicken it up)

Put it all in a big pot and let cook for apprx 1 hour on a low setting. Don't let it boil.

Enjoy!!!
 
Tonights dinner was ham (Honey Baked Ham, already cooked, just had to heat it a bit) and the Maui Scalloped Potatoes that used to be served at 'Ohana (putting my new Chef Mickeys cookbook to use ;) ).
Maui Scalloped Potatoes ('Ohana)
4 med. baking potatoes
1 1/2 cups heavy cream
1 cup shredded cheddar cheese, firmly packed
1/3 cup grated parmesan cheese
1 med. sweet onion (about 2/3 cup), chopped
1 tablespoon salt
1/2 teaspoon pepper
1 tablespoon fresh chopped chives
Preheat oven to 375*. Butter bottom and sides of 9x13 glass baking dish.
Wash potatoes thoroughly in cold water and pat dry.
Pour heavy cream into a very large mixing bowl.
Slice the potatoes 1/8 inch thich and add them to the mixing bowl; toss in cream until each slice is coated.
Add cheddar cheese, parmesan, onion, salt, and pepper. Toss until all ingredients are evenly mixed.
Spread evenly into baking dish.
Bake on the center oven rack for 1 hour and 15 minutes, or until potatoes are tender and brown on top. Remove and let stand 5 minutes.
Top with chopped chives.

Tonight we are having:

Halibut Pesto Pizza

I don't really have the recipe with measurements but......

1 recipe yeast pizza dough, your favorite
Cream sauce with pesto (instead of pizza sauce)
Shredded provolone, parmesan and mozzarella
Lightly cooked, flaked halibut
artichokes, sliced
fresh chopped garlic
And...whatever else you desire.

Yum!!

The 2 cans of diced tomato are in there already! I don't do sauce bc I don't want to make the potatoes too soggy - which is why I only put the tomato around the perimeter at first. But I would think after the 30 min stir a nice layer of mozzarella would be great! :)
 
Tonight I made a Mexican-inspire (lol) version of Disneyland's Cafe Orleans pomme frittes. I cut several potatoes into "steak fry" shape and sprayed them with Pam. I then combined 1/2 cup of Parmesan cheese with salt, pepper, parsley, and paprika in a baggie. I tossed the potatoes in the mixture and baked for 20-25 minutes at 400. Delicious!
 
Crock Pot Corned Beef with Veggies a la Nikki ;)

3 1/2-4 lb. Corned Beef Brisket
3-4 Large Potatoes
1 Cabbage
1 Cup Carrots
1 Medium Onion
Beef Stock
Water

Cut potatoes, carrots, and onions. Layer them on the bottom of the Crock Pot. Rinse brisket and place on top of veggies. Add equal parts of beef stock and water so that it just covers the meat. Cook on LOW for eight hours. Remove veggies and brisket. Cover with foil to keep warm. Add cabbage (cut into quarters or smaller) and cook on HIGH for 30 minutes. Serve with Gulden's mustard.

Snow day today, so comfort food just sounded good! So i'm making chicken and dumplings in the slow cooker. It's a new recipe for me, so I hope it turns out good :goodvibes

4 chicken breasts
2 cans cream of chicken soup
1 small diced onion
2 tablespoons butter
1 can chicken broth
1 can biscuits

Cube the chicken breasts, season as desired, then place in slow cooker. Dice onion, mix with chicken. Add butter, 2 cans of cream of chicken soup and 1 can of broth. Mix together. Cook on low for 8 hours. About an hour before it's done, roll out bicuits and cut into strips, mix in with the other ingredients.
We did double up the recipe as it didn't seem like it would make much.
 
I just saw a similar recipe the other day online. Let us know how it comes out! I'd love some chicken and dumplings!!! :)
 
The chicken and dumplings turned out really good! Next time, however, I will use less broth and put the biscuits in for the last 2 hours. It was a tad soupy and some the biscuit pieces were a bit doughy. But the flavor was excellent!
We ended up making fresh snow ice cream for dessert :thumbsup2
 
We had spaghetti and salad; not exciting.

BUT I am excited about the pumpkin spice muffins I baked. Add one can of pumpkin to a spice cake box mix, and follow the baking instructions on the box for muffins and VOILA!!! That's about as easy as it gets!!

And you could probably add cream cheese frosting to the top of them to be really bad, but I've resisted!
 
Tonight:

Black and pinto bean chili soup with leftover bbq (either beef, burger, or hot dog)

Chili soup--- tonight's version:
Fresh garlic chopped into a little olive oil to coat pot. Added in chili seasoning packet. Add a few other spices. 1 ...14.5oz can of diced tomatoes, 1 can of tomato soup, half can chicken broth, 1 can black beans,and 1 can fat free pinto beans.

When we want to eat...haberno ajo sauce (garlic)from our NYE Cozumel stop, low fat cheese, and maybe tortillas, and choice of meat.

Dessert---Edy's light ice cream..I think it is cookie dough.
