OUR DINNER TONIGHT:
Seafood Ciopinno
24oz can diced tomatoes with basil and garlic
10 oz can of diced tomatoes with green chilies
8 oz can tomato sauce
2 tsp old bay (or to taste)
8 oz shrimp cleaned
8 oz scallops
1 can whole baby clams
4 pieces tilapia
1 piece halibut
1 tsp Italian seasoning
2 tsp minced garlic
2 bay leaves
2 tsp olive oil
2 bay leaves
In large frying pan or dutch oven place olive oil, garlic, and Italian seasoning. Simmer garlic until golden. Add in all tomatoes, sauce, bay leaves, old bay, clams, scallops, shrimp. Bring to boil and then reduce heat and simmer for 10 min. Place fish on top and cover and continue to simmer until fish is white and flaky. Flip fish with spatula so it does not break apart. Remove lid and let reduce about 10 min on simmer. Serve over linguini or rice.
