what ya cookin'?

I'm with you! If I'm eating in while on vacation, I want to have meals that I normally wouldn't have at home. Some things that I fix are:

Breakfast:
quiche (pre-made from the grocery store of course ;)) w/ fresh fruit
chocolate croissants (from you're fav. bakery) w/ fresh fruit

Lunch:
make sandwiches with croissants instead of loaf bread

I know there's more, but now I'm drawing a blank. I'll try to post more later. :D

Anyone else got any ideas for meals that you fix on vacation, but normally at home? :Pinkbounc
 
I also got a recipe for a cedar plank salmon for the grill the other day. I'm going to try it in July. That's definitely not something we have everyday. :) If anyone wants the recipe, let me know. :Pinkbounc
 
We are going to be staying in our camper, but I have two meals planned. Taco salad and spaghetti with meat sauce-very easy, kid friendly meals (since we will have six of them with us). I also plan on making a fruit salad for mornings and afternoon snacks. I am making rice krispie treats before we leave, but I have a feeling I will be making more while we are there.
 
We like grilling, and always do alot of it while camping. I hate to be stuck inside the camper cooking.

Our fav:
Marinate chunks of beef, (london broil works best) onions, mushrooms and chopped garlic in italian dressing. Wrap individule size portions in aluminum foil. Cook on the the grill for about 1/2 hour and you have a great quick meal, thats easy to clean up.
I usually cut the meat and veggies in the morning, add the dressing, then let it sit in the fridge all day while we're out.
 

Thought I'd bump this up for any more ideas. We're leaving in a week and decided that maybe I should cook & freeze this weekend.

My thoughts were spaghetti sauce with meatballs and jambalya. I know those 2 will freeze well but just think it's overkill on tomato-based meals. Need some different ideas. Guess I need to ask DH if he thinks we'll grill. I like some ideas in previous posts.

BTW, we're driving ... staying in the cabins for a week ... think DH will kill me if I try to pack the crockpot though!

I think we are going to take the crockpot this time. We did a lot of grilling last time but it takes awhile to light the coals and we will have very tired SR citizens with us this time. So I am planning on taking down frozen stuff and thrownig in the c.p. So far...spaghetti and meatballs, homemade veg beef soup/sandwches, ham bar-b-q like the pittsburghers make, shredded chicken tacos and pizza. Anybody have any other ideas? I need about 2 more different ones.

How about breakfast for dinner -- omletes or just your favorite breakfast meats with eggs, biscuits, butter & jelly. How about your own breakfast pizza -- take hash browns lay them out on a round baking sheet or whatever you have and pre bake them until they are golden - while that is baking scramble your eggs and brown any meat / veggies you want to add. When everything is done top the hash browns with everything and add cheese - put it back in the oven just to warm and melt everthing together and then you have dinner / breakfast.

What about a meatloaf - you could make it at home, freeze and then just warm and serve.

When we went I took pre-browned hamburger for a quick hamburger helper / meat sauce / sloppy joes / etc. This really helped for a quick meal.

I never thought of doing ribs in the crock pot...I bet they come out soooo good! I just packed a crock pot in the camper...I think I'm going to give crock pot cooking a try this trip.
 
There was a recipe posted awhile back by sltrawick for Cream Cheese Chicken which we've tried and is absolutely wonderful! It's made in the crockpot, and then is served over rice or noodles. It it smells soooo good while it's cooking! That is definitely on our menu at FW next week!
