What would you do for one day only - NO PARKS

Hey guys, my boyfriend and I are going back to Florida soon and having been to Disney pretty recently, we're not planning to go back to the parks.

However,we're going to go back to Disney for one whole day, to do non-park stuff. Can you recommend...

One or more activities to fill the day and a restaurant (we LOVE Ohana but want to try something different)...???

One whole day... I would sign up to the hula dance lesson at Poly (this is on every Sat @10am. I would have lunch at Kona Cafe. Then rest a little bit. I would ride the monorail and go around a couple of times. I would stop at CR to do a little shopping there and on to GF to do a little bit more shopping. Then back to Poly. Rent a surrey bike. Then I would go swimming and sun bathe. Watch the kids play in the sand. Have a snack at CaptainC, then back to the room and rest or lounge around the lobby and make some leis. Then go to downtown disney with my homemade leis. Then back to Poly. Get ready for dinner at Ohana. After dinner back to the room and rest some more. Go back out and take the boat to anywhere the boat will take me and not get off the boat and back to the resort. Go back out to go swimming and watch the EWP and then watch the "Wishes" from the beach.
 
I would shop the day away at DTD and maybe do DQ and dinner at Rainforest Cafe, you can get cheaper DQ tickets from mapleleaftickets.com
 

Shop DD do some resort hopping ending with the Contemporary and go up and watch the fireworks from the balcony. Remember the Boardwalk comes alive after the parks close so that an option to make the day last a little longer.

Ride the bus over to the MK just before closing time and watch the tired worn out crowd exit the park and be glad you not one of them:)

OH geez there so many things I'd do given the time to do them seems all my disney time is spent in the parks. Maybe I can talk DH into extending our stay at a hotel offsite 1 nite so we can do a few of these fun things when we go on our adult trip in a few weeks. HMMMMMM then we also get a FULL day of disney fun in the parks that last day instead of leaving early evening that could work well:)
 
One non-park thing my DH and I always do is play a couple of rounds at the Winter Summerland miniature golf course.
 
Well, if you like Jimmy Buffet i would check out Margaritavill at Universal City walk. Me and my DGF spent some time going around to all the resorts, spent some time in downtown disney then finished off the night at Pleasure Island (Comedy and Adventures Clubs)
 
I would spend part of the day at Downtown Disney. The ships are not nearly as crowded in the morning as they are at night. Then I would do a round of mini-golf. I would most likely end the day with dinner at the Poly or Contemporary and then catch the Magic Kingdom Fireworks and Electrical Light Pagent.
