What would the last dinner ressie be if park closes at 7pm?

We are going to the world in October and I am going to be making our ADR's on Wednesday am. On a few of our days MK and Epcot close at 7pm. I was going to try to make ADR's for Crystal Palace and San Angel at around 6:30pm. Will they give a 6:30 ressie if the park is only open til 7. Does anyone know what the last ressie would be if the parks close at 7? Thanks, Linda
