What would the dining plan pros do??????

We (DH, DW and DD's 5 and 9) are planing a trip Dec 1-6 for DD 6th birthday!!

Our ADR plan is as follows:
Dec 1: Candlelight processional dinner package at Italy
Dec 2: lunch at Crystal Palace
Dec 3: Breakfast at Chef Mickey's
Dec 4: breakfast at Akershus, dinner at 'Ohana
Dec 5: breakfast at CRT, Dinner at Boma
Dec 6: Breakfast 'Ohana

We will be on the dining plan, which allows for 5 table service meal credits yet we are scheduled for 10!!!!!!

I ran the numbers and if we pay for CRT, Candlelight processional dinner and 'Ohana breakfast the cost is almost exactly equal to upgrading to the deluxe plan.

Am I missing something? It looks like upgrading to the deluxe plan would be more cost effective way to go as we still will have one CS meal per day, resort mugs and an extra snack per day.

Yep, 10/15 = 2/3 which is pretty much the "break-even" point for DxDDP (hence the similar costs between DDP + OOP and DxDDP). If those are must-dos and you don't want to trim down the list at all, go for DxDDP.

Note that DxDDP don't differentiate between TS and CS credits, you can use all credits however you please. So you can fill/use the remaining credits (you'll have 15 total each) with either CS locations, or maybe a TS Dinner on Days 2 and 3. (Would be a little more with the tips if doing that, keep that in mind).
 
Agree with above poster: the DxDP would certainly seem to work for you, and the flexibility of using the credits how you wish should come in handy.
 
I would definitely upgrade to the DxDDP if you are planning on getting 5 more TS ADRs (you would then get 15 TS credits to use as you wish). If you do not want to upgrade to the DxDDP, I would recommend that you pay for the breakfasts OOP and use your TS credits on the dinners, as breakfasts tend to be much cheaper than dinners at WDW.
 

DW is the lead planner for this trip, I am just helping out(she is starting to see how much planning I put in on previous trips).

I don't think she wants to cut back, if anything she wanted a fantasmic dinner package too!!!! But F! is only scheduled on dec 2, and we already have tickets to MVMCP that day. I wouldn't be shocked if DW wanted to add 1900 PF on dec 3 if there is no F!
