I have a few leftover pork chops and don't want to throw them away! Any suggestions as to what I can make for dinner tonight with them?? You guys are so good at this stuff!!
Shred them and make enchiladas. I usually make carnita (shredded pork) enchiladas! It's so simple. Use your favorite mexican seasonings (I use taco seasonings sometimes when I'm rushed), a can of tomato sauce and 2 cups of chicken broth. Mix it all together along with the shredded pork and let simmer for about half an hour until the pork is falling apart.
Then fill the tortillas with the mixture and some mexican blend cheese, I love the Sargento one with the bits of jalapeno jack cheese, and roll them, leaving sauce behind to put over the rolled tortillas along with shredded cheese, and bake for about 20-30 minutes until the top is brown and kind of crispy.
If you want them a bit spicy then all you need to do is add in a spoon of the adobo sauce that comes with the canned chipotle.
Hmmm, we usually do not have alot of leftovers but with somthing like that (breaded), I would probably just reheat them and serve them with a gravy or something like that...a sweet and sour sauce, mustard sauce.
Pork fried rice. Cook your rice, stir fry after it is cooked with vegetables, the pork cut into small pieces, some soy sauce, maybe some peanuts if you like, sesame oil or seeds, sprinkle of red pepper.
Op when i've made them like you I've just put them in a shallow baking dish and poured some cream of mushroom soup over them and put them back in the oven to warm up. mmmmm, good and easy. Sometimes I just make them like that the first time.

I second this. I always cook extra chops to do this very thing. If you are short on time you can buy frozen fried rice at the grocery store (we buy ours at Trader Joes).
