I used my normal cheesecake recipe (that usually makes a 9 inch cheesecake) for 3 mini 4" cheesecake pans and wound up with roughly 1/2 of the batter left over. I'd hate to waste it and just throw it out.

Any ideas for what to do with it?

Eat it, of course. I mean, duh!

Ha!! Well sure! There just isn't enough to fit in the usual pan and I only had 3 of the little ones (which are currently chilling in the fridge).

It was an experiment, honestly. I've only ever made the full sized ones before and wasn't really sure how much batter I'd need for the 3 little guys. We'll be creme brûléeing the tops of those - I've done that before on the bigger ones and it was fantastic!

Put it in any baking dish and bake it and eat it! If it's just for home, who cares what you make it in! My kids would eat it out of a muffin tin, a pie pan, a bundt pan....LOL! :rotfl2:

Just bake the rest in any suitable pyrex/corning ware type dish.

Make chocolate cookie cheese cake bars...

Layer cookie dough in the bottom of a pan, then the cheesecake batter, then drop more cookie dough on top and bake like a pan cookie. Yum!

I put it in cupcake tray with liners with a cookie on the bottom for crust and bake it. Top with cherries.

Make 3 more.

Thanks for all of the ideas, everyone! I showed the thread to DH, and this is the one he requested:

Make 3 more.

What can I say, my guy really loves cheesecake. :). I refrigerated the batter, so we should be good to go today after I bring it back down to room temp.
