What to do on a day off from parks?

The bulk of our recent florida trips are made up of "days off". We visit the parks only 1 day, maybe 2. Our main goal is to enjoy the wonder florida sunshine by the pool. We get up early, grab some lounge chairs, and hang out by the pool all day long with a good book. I'll jump in the water and play with the kids regularly. Now that's a vacation!
