What to do at MCO for 3 hours

This! LOTS of options pre-security in the main terminal.. In addition to food options, there are also lots of great shops for browsing merchandise (Disney, Universal, SeaWorld, etc.).. The east atrium also has nice sitting areas around the central fountain, occasionally they have live musical performances in that area..
 
Going back to the first post, the people in question are arriving at 8:00 am. I'm not sure how early all the shops and restaurants open.

The restaurant I suggested, McCoy's at the Hyatt, starts serving breakfast at 7a. The only option for a table service breakfast.

This would be my suggestion. From landing to getting up from the table after a leisurely breakfast I'd guess 100 minutes, maybe a little more. That's more than half the time killed right there.
 
By the time they get off the plane, on the shuttle, and down to baggage and back up, it will not be long until 9 am. The food court will have breakfast, and shops will be open. And there Is plenty of comfortable seating. They will be fine.
