I bring a bag or backpack that can easily be hung on the stroller. Inside I have:
food/drink - waters; snacks, like a can of pringles or packaged crackers
sunglasses for the family
***The above serve their obvious purpose, but also pass the time in lines. What I mean is, you can not imagine how much time can pass as 2 young dd's pose with their sunglasses, then switch, then put them on upside down; you get the idea. Likewise, a can of pringles being passed around will get you from the end of a line all the way up to the front. We still all get Mickey bars or popcorn, but having them in a bag at the ready is so helpful.
I also always have a mini-first-aid/medicine kit with me. I have regular ibuprofin, kids tylenol (for us, both liquid and chewables), band-aids, anti-bacterial gel, antacid, lip balm and sunscreen (the spray kind). These are all compact sized, so it is less cumbersome than it may sound.
Lastly, I usually have smaller bag, that can go inside the large bag with my valuables (money, room key/card, camera). This way, I can just grab that out when going on rides.
Hope this helps...sorry its so long...
