What is the earliest that we should schedule the dreaded flight home?

You'll get varying responses to this; DCL says not to book a flight before noon but folks have easily made flights as early as 10:30 to 11:00 before. It depends on your transportation back to the airport and your tolerance for rushing around. I'd say nothing before 11:00 just to be safe.

Will that create a problem with docking on time and what about travel to airport?

No, not generally. The only slow-up is if the ship takes longer than normal to clear customs. Generally they start allowing disembarkation around 7:45 am. The drive to the airport from the port is about 50 minutes.
