I changed all our plans around to add MNSSHP on 9/1

Now I have us eating dinner in Epcot the first three nights of our trip (hopping from MK on day 1 & 2, HS on day 3) I just want to be sure we'll be at Epcot soon enough to get FP+ for Soarin & Test Track at least one of those days. Going to MK on arrival day cause I just don't believe I'm there till I see the castle. Easy WDW says stay away that day cause of EMH, so we'll probably just do a few rides (courtesy of FP+) and then head to Epcot. The next day is recommended at MK, so we'll go there for the better part of the day, then go to Epcot for dinner & PM EMH. What time should I schedule dinner on both days to work out best with the crowds and the potential Epcot FP+? (BTW, the dinners are 1)CR, 2)San Angel, and 3)CDF)
