What time does CS close in Epcot?

We are staying at BC and I thought it might be fun to get dinner our first night at Epcot. I was shooting for counter service. What time do they close (Mexico etc.?). We wouldn't be getting there until 7:00 p.m. ish.

I remember standing in line at Mexico's counter a few times getting a last minute churro w/Illuminations getting ready to start

We tried to go right after illuminations and they were closed. I guess they close when illuminations start.

I know that Tangerine Cafe is open right up until 9:00. Several times DH and I have gotten our food just before Illuminations, and sat in the outdoor cafe eating while Illuminations was going on.
