So are they limiting people to one part of the buffet while they change out the rest? or are they just replacing breakfast trays with lunch as they get empty? Does the restaurant empty out between services?
I have an ADR for 10:35am (all that was available). I was worried about feeling rushed, but if the changeover is gradual, that shouldn't be a problem, should it? Others advised me to get an earlier adr but there are none.
No. But they start changing out before 11 am. One side at a time. I think the chance of them still having breakfast items after 11:30 is slim to none. The OP's ADR is for 11:35, and they will probably not be seated until at least 11:45. I've never been sat at my ADR time at the Crystal Palace, there is always a bit of a wait.

I think that is a great time! You won't be rushed, when they start the change over they only take one side out of service. And both sides to the buffet serve the same exact foods so you won't be missing out on anything.

You should be fine, as it is a gradual changeover. You'll be one of the last few with a CP breakfast reservation later than 10:30, as going forward, they all end at 10:30. I'm assuming that's to cut down on the "double dipping" of paying for breakfast and hitting the lunch buffet.
