What should I stuff these with?

Or, what should I make for dinner?

I have boned out some chicken thighs, and I am trying to decide what, if anything, I should stuff them with.

I can fill and roll the thigh meat around; wild rice, white rice with garlic, onions, and leftover taco meat, bacon, cheese, stuffing, or even make little rumaki filling with chicken liver and bacon.

I can also just cut them into strips and serve them with mashed potatoes and a gravy made with the chicken livers. Or serve oriental style noodles with carrot, soy sauce and egg.

I've got time and I've got ingredients...help me figure out what's for dinner?
 
I do a bread stuffing like I would stuff a turkey and roll them around it.......I spray with pam on the pan so that they wont stick to much and then fold part is on the bottom.....I sprinkle a little bit of seasoning or shake and bake.....just a little and losely cover the top with foil......about fifteen minutes before finished take off the top and voila....yummy chicken thighs........I also use the chicken thighs with bone in ......I boil them first and take off the skin and then put it in my all day cooking spaghetti sauce.....YUMMY...
 
Saute onions & garlic until slightly brown.......add them to some seasoned bread crumbs with an egg and some parmagian cheese if you have it on hand and stuff the chicken. Drizzle a little olive oil on the outside and sprinkle some bread crumbs for a little crunch.
 
I like to make chicken breast stuffed with cream cheese and wrapped with bacon.
 

So many yummy sounding ideas. I've done the bread stuffing thing before. The cream cheese sounds really interesting! Too bad I don't have any.

I minced up two slices of regular bacon and browned that up. Then I added a half a minced onion, two cloves of garlic and 3 chopped up chicken livers. I cooked all of that until it was cooked through, then added about 1/4 cup bread crumbs, thyme, sage, salt and pepper.

It smells and tastes really good, I am just letting it cool before rolling it, breading the rolled packets and baking them.
 
It was very good. Could have added some spinach or some cheese to the filling.

However, I went crazy with the leftover liver and made gravy out of them. I OD'ed my DH on liver tonight. OOPS.

Kids had leftovers, btw. I'm not mean enough to make them eat liver.
