I honestly wouldn't bother with Disney Springs. It's just an outdoor shopping mall with some unique restaurants.

One thing to keep in mind, that weekend is Dapper Day. It doesn't generally impact crowds too much, but it's not impact-less either. Saturday the 28th is the outing to MK, and Sunday the 29th is EPCOT. It makes for fun people watching, with all the beautiful outfits.
