What should I do?

Am going to WDW in August. All plans are set, all ADRs made and so forth. Now I find that I am allergic to peanuts and tomatoes! Should I call DisneyDining and tell them now or should I wait till we get to each resturant and tell them then?

Tell them at each restaurant. You might take a look at different menus available online to help you a little in advance. My daughter and I have peanut allergies and ate all over WDW with NO trouble. There are plenty of non-peanuty options. (I don't have the tomato allergy, so I can't speak of that.)
At Boma, when I told the server of the peanut allergy, she had the chef come out and walk us over the entire buffet (and that's a looong buffet) telling us what to avoid. There were 4 or 5 things, tops, to avoid.
If you're planning on Ohana, they do have a peanut sauce that I remember, but they offer other sauces as well.

I don't have any experience with this, but after reading the boards for years now, I'd say tell them when you arrive. It seems that most of the chefs and the staffs are more than willing to work with you at even a moments notice.

hi, i normally only lurk on the restaurant boards, but for once feel i can help
firstly pop over to the disabilities board, lots of v useful info on dietary requirements over there
they will give you the email address of brenda who will match your adrs with your allergy and inform the chefs and wait staff. v helpful.
they disabilities people will also tell you that mickey bars contain treenut oil and the whole thing...
(i have IBS and food allergies too, although not life threatening like some.

get the phone number of each ps call ahead 24hrs tell them so they are ready. they will work with you they just need the time to make sure they had what you want.
