Ducklite and BCV are right--some tables at each restaurant have great views of the fireworks--but they are never guaranteed.
In fact, most tables do NOT have a great view of the fireworks, so what you find is that at fireworks time, most patrons either get up and walk over to the window area, or walk outside to an observation "area" and watch things from there.
That said, my advice is--if all you REALLY want to do is see the fireworks, best to to do that elsewhere rather than spend a lot of $$$ a nice restaurant. But if you want a fine meal plus a good view, then California Grill and Narcoosee's (and perhaps O'hana and Citrico's) are fine.
