Typically, Animation Magic is offered only on cruises when everyone will dine at Animator's Palate twice, so it is unlikely to be on a 5-night cruise. One night will be Pirate Night, and one night will probably have a menu that is the same at all restaurants.
If you want to book Remy on Pirate Night, you can check which day the Bibbidi-Bobbidi-Boutique offers Pirate makeovers and choose that night. (If you want to avoid booking Remy on Pirate Night, you can still check which night it will be.)
I usually book adult dining on a port day with an early all-aboard time, giving me time to get dressed up.
If there is a show you won't want to miss, you can see if any nights have booking times that are late enough to allow you to attend a show first.
If you want to attend an evening beverage tasting, you will probably want Remy on a different night.
If you find once you're onboard and see the 5-night schedule that you'd prefer a different night, you can try to change.
