What is your Thanksgiving Menu like??

Hi guys, I know it's still a little ways away but I am putting together my thanksgiving menu and I am just curious as to what everyone else eats on Thanksgiving. Everyone has their traditions and special holiday items I would like to know what makes your Thanksgiving or Holiday meal complete. Here is what I cook, and before you say gee that's a lot of food, we usually have 15-20 guests so we have to cook alot.
Fried Turkey
Oven Roasted Turkey
Smoked Turkey
Brown Sugar Ham
Dressing( for the northerners Stuffing)
Mashed Potatoes and Gravy
Turnip Greens
Chicken and Dumplins
Brocoli Casserole
Green Bean Bake (an oldie but goodie, dh couldn't do without)
Candied Yams
Peas
Rolls

The only thing that I usually vary is the deserts, although I always make sure we have pumpkin and pecan pies. This year I am making a sort of double layer cream cheese type pumpkin but other than that I am not sure. So get out your thinking cap and let me know, I would love to know what is on your plates on Turkey Day.

Oh yummy....I've been thinking about Thanksgiving often as of late...cannot wait.

Our menu usually is like this:
Roasted Turkey
Gravy
Cornbread stuffing
Mashed potatoes
Steamed green beans with toasted almonds
Cranberry sauce (both kinds)
A fruit salad of sorts
Rolls and butter
Olive/pickle tray

Dessert includes pumpkin pie (usually from Costco-yum) or a pumpkin pie dish that my mom makes with a yellow cake mix topping. And then this Pampered Chef dessert has become a fave over the years- apples mixed with brown sugar, other spices, cranberry sauce and covered with slices of sugar cookie dough, baked....very, very tasty!
 
Thasnkgiving is my DS birthday, this year he will turn 11 and it falls on T-Day ..just as it did the day he was born . So there will be a birthday cake and the menu below:

Roast Turkey
Stuffing
Gravy
Mashed Potatoes
Acorn Squash
Green beans
Stuffed artichokes
Assorted meat and cheese plate as appitizers
egg nog

We do pies for desert also, and a pumpkin walnut cake I made last year... if can find the recipe :confused:

However my father passed away 5 weeks ago and life just will never be the same. Im having some issues with wanting to do the holidays and the only reason iam is for my children.

DD makes a great individual turkey pies with leftovers. We feast on the leftovers for the next two days.

Before anyone out there thinks we are oddballs we too have cranberry sauce, though it is usually just the oceanspray from the can, this year I am thinking of trying something like a cranberry salad or mold or something different like that. We'll see.

Tinker pixie- Would you be willing to share your receipe for stuffed artichokes? They sound sooo good!

Could you post that pampered chef recipe please? that sounds like something my family would really like- I get tired of the pumpkin and pecan stuff!
 
Okay, found the PC recipe- Cranberry Apple Cookie Cobbler
4 Granny Smith apples
1 16 oz can of whole berry cranberry sauce
1/3 cup brown sugar
3 T. flour
1 t. cinnamon
1 20 oz package of refrigerated cookie dough

Preheat over to 400

Peel apples, core and slice and place in deep dish baker (about a 9x9 pan). Combine sugar, flour and cinnamon in bowl, add cranberries, mix well and pour over apples. Using only half the cookie dough package, cut into 1/4" slices, and arrange on top of apple/cranberry mixture. Bake 30-35 minutes or until golden brown. Recipe may be doubled and baked in 9x13 baker.

It's VERY good!

relish tray (gerkins, olives, celery, carrots)
potato filling (stuffing/dressing)
oyster filling (does NOT go in the bird)
green bean casserole
corn pudding
sweet potatoes - candied for the family & baked for me
crescent rolls
mincemeat pie
pumpkin something - either pie, pumpkin cheese pie (bought) or pumpkin job

We usually go to my sister's & that's what we always had there. Now my parents are older & DSis is not well so we've cut way back. However, DH can't stand that we don't have turkey leftovers & all the goodies so I usually make the turkey here on Friday. I admit, though, that we have all of the things listed above - but spread out over several days not all at once.

Turkey legs and dressing

There is no use in cooking a whole Turkey because we is going over to my Mom sisters house to Thanksgiving dinner.

I will get all the sides from there. I have to worked the day after Thanksgiving.
 
Thankyou for noticing I mentioned my father just passed, and for your warm thoughts.

AS for the artichoke recipe my family makes two different ones. But they are basically the same.

4 stuffing artichokes
1 1/2 tablespoons minced garlic
2 eggs
1 loaf bread
1/4 pound deli ham ie: hot coppacola, presutini, boiled ham, prossiuto, etc.. any ham you prefer. cut into smal pieces
5 tbls. olive oil
salt pepper to taste


Fill a large bowl with warm water , take several pieces of bread and dip quickly into the water. You dont want the bread to be drenched it will fall apart.. so do it quick. Squeeze it a bit if you need to, allowing the bread in the middle to get dampened.

Break bread into small piecesinto another large bowl. Do this with all the bread.... add garlic, eggs, ham, 3 tbls oil salt and pepper ..mix it until well combined. It should be sticky, if not add a bit more water until this happens.
set aside.

In a large pot start to boil about 3 inches of water ( you want the water to be as high as the bottom of the artichokes will be in the pan.

Cut bottom stump off artichokes, run a knife along the top of each row of leaves to remove the sharp point at the top. Get all those points off. Stick thumbs down into the leaves to seperate them from the body as much as you can, to much pressure and the leaves will break off, you will figure how much pressure as you going along. Do this under running water to clean the insides.

Use a spoon and start to stuff the filling into those leaves, keep pressing the stuffing down and fill a few rows. Dont get crazy and try to fill every single row. The closer in the leaves are the harder it is to stuff so do as many as you can.

After they are stuffed place them standing up in the boiling water
drizzle remaining oil over the tops , place a lid on it and turn it to simmer.
Artichokes are done in about 20 minutes depending on size. To check if they are done pull at an outter leave and if it seems to want to break off easily they are done :)


The second recipe is

3 cups bread crumbs
2 1/2 tbls minced garlic
1/4 to 1/2 cup olive oil
salt pepper to taste

Cut clean the artichokes the same as described above... boil the water the same.

For stuffing : place crumbs in large bowl
start to add oil slowly, use a fork blend together . Mixture should appear wet but not soaked. You need to use your judgement and keep blending them to allow the most crumbs to get moist by the oil. Add other ingredients and fill and cook as described above.

My mom makes this one, with one difference - she cuts the top flat after trimming the points, stuffs, coats the flattened part with egg, then flips and fries to seal all the filling in. Then boils... don't really know if it's needed, but she's done it this way for over 30 years!!

Then she does one with a twist - same exact recipe - but boils about 15 mins, drains and cooks about an hour in tomato sauce. MESSY - but SO GOOD!
 
I guess I'm really lucky because my MIL has Thanksgiving dinner either the weekend before T-Day or that Wed night and then on T-day, we either go ot my mom's, one of my aunts or one of my cousin's houses. My house is too small to hold all my relatives!

At my MIL's she always has:
Turkey & dressing (not very good -- uses box stuffing)
mashed potatoes (again not very good b/c she uses instant)
mac and cheese,
green beans (AWESOME!)
fried corn (AWESOME!)
pinto beans
fried sweet potatoes
misc pickles
beets
usually a jello salad of some kind w/coconut & marshmallows
which I DO NOT like at all!
rolls, biscuits, and cornbread
misc desserts

At my cousin's house it is a pot luck and depending on how many come it can vary alot. Can be between 20 to 40 people!!
The hostess always has the turkey, dressing, mashed potatoes and gravy.
Then someone brings green beans or lima beans.
broccali casserole or broccali w/cheese sauce
baked or fried apples
fried corn (my mother's by request of everyone)
fried sweet potatoes (I bring these by request of everyone)
Dirty rice (my cousin, Pam, brings this by request of everyone)
mac & cheese for the picky kids
relish tray including various pickles, carrot and celery sticks
beets
Pink Panther Frozen salad (I bring by request)
1 or 2 other misc salads including an awesome tossed salad by my cousin Pam that is to die for!!)
misc fruit salads
yeast rolls
drinks
desserts inlcude pecan & pumpkin pie. My mother MUST bring the pecan pie--she makes the best.
usually a chocolate ice box pie or a fudge pie,
cheese cake or other desserts

After dinner and watching some football we decide to either swap names for exchange or make plans to play Dirty Santa at our Christmas get together. It's always a good time.

Well, this year it will probably just be dh and I, but I'll make the usual.

Roasted Turkey
Stuffing (with apples, celery and cranberries)
Gravy
Mashed Turnips
Fresh Brussel Sprouts (steamed)
Cranberry sauce (both kinds)
Mashed Sweet Potatos
Usually make Ambrosia (but probably won't this year)
Rolls and butter


Apple pie is a must, but dh likes pumpkin. Don't know what I'll do this year if it's just the two of us.
