BANANA BREAD PUDDING
from Bomas
4 c heavy cream
27 oz fresh eggs
1/3 oz cinnamon
5 bananas
2 lb croissants, brioche, or challah, sliced
4 c milk
19 oz sugar
4 oz butter
Cut day-old bread into pieces & place in deep pan. Mix custard except for butter. Soak bread with the custard. Slice bananas & incorporate into pudding. Place butter on top of bread pudding. Bake in hot water bath oven at 275 degrees for ~45 - 60 minutes until an inserted knife comes out clean. Serve with Spoon Vanilla Sauce. Serves 12.
VANILLA SAUCE (I've never made this part.)
24 oz heavy cream
1 oz cornstarch
6 egg yolks
1½ c milk
4½ oz sugar
¼ oz vanilla
Heat up milk, vanilla, & heavy cream. Dissolve cornstarch with egg yolks. Add sugar. Once liquid boils, temper some of the liquid into the yolks & stir vigorously. Then return tempered yolks to pot. Turn off the heat & stir continuously until well combined & thickened. Transfer the sauce into a bowl & set over an ice bath to cool.
