I've never tried Mission Space, but this and test track could be done with fast pass and child-swap. Spaceship Earth is fun for the whole family, along with Living Seas (I am not personally into Living Seas, but it might be very nice for a 2 year old). Figment is ok, "Honey I shrunk the Audience" might be scary, it depends on the child.
The musical fountain (I don't know if there is an official name) just past Spaceship Earth is a fave of my kids. They love the music and think the fountain is the best. The jumping fountains outside of "Honey I Shrunk the Audience" are also great, but the kids can get quite wet if you let them!!
The character bus travels around...we caught them right in the center in front of the lake and were able to see a lot of characters this way.
The Mexico boat ride is fine, but the Norway boat may be a bit scary. Again, depends on the child (there is a troll, a drop and it's dark).
The masks are fun. For a 2 yo, I imagine making the base mask and maybe stopping at a couple of countries for stamps would be enough. The shows are great. The more lively ones (acrobats, bands, drums at the outpost) might hold the most interest (although I love the statues the best).
Jasmine, Aladdin, Genie and Jafar can be found toward the back of Moracco. Belle & Beast are in France (behind the perfume shop). I have seem Snow White in Germany and by the back entrance to the WS. Mulan might be in China, but we didn't see her. Mary Poppins is in the UK.
Illuminations is a great show. My youngest was nervous at 2, but she is afraid of most things. She put her head under her "little blankie" on daddy's shoulder and fell asleep. But many kids seem to like it. I most recently viewed the show while eating outside at the Rose & Crown..it's a great way to see it, but there is no guarantee of an outside seat.
A stroller is a must....Epcot is huge and there is a lot of walking.
Have fun!!!
