Snicker Salad

I know some add craisins to this at Christmas to make it festive but to me this is a great summer dessert!


Snicker salad

4-6 Granny Smith apples chopped in large chunks with peels left on

Cool whip large container

1 can sweetened condensed milk

1 small package instant vanilla pudding

crushed pecans ( or glazed walnuts)

2 ( or more) snickers bars Jumbo sized. ( I like 3 )

In a large bowl add apples, snickers, and pecans.

Thaw cool whip, add milk, and vanilla pudding.

Pour liquid over apple mix and stir.

This is a wing it recipe, anything works really. I really like it with Cheesecake flavoured pudding myself and use low fat everything (well ok except the snickers)

Traditional mustard potato salad, deviled eggs or something with the silly name Pistachio Delight. It's just Cool Whip, pistachio pudding mix, crushed pineapple and nuts and people always love it.

We call that a Watergate Salad. My mother made it for every gathering, so now I make it for everything too since she died. I don't have a lot of great memories of her, but that is one.

For Potato Salad
2 lbs red-skinned potatoes, quartered
2/3 cup crumbled Roquefort
1/2 lb green beans trimmed
1/3 cup walnuts toasted and chopped
8 T mustard vinaigrette

For Mustard Vinaigrette
1/4 cup dijon mustard
3 T white vinegar
3/4 cup olive oil
2/3 cup chopped onion
2 T fresh rosemary
2 t fresh sage

Whisk together ingredients for mustard vinaigrette

Preheat to 450. Mix potatoes and 3 T vinaigrette in large baking dish. Roast 20 min. Reduce to 375 and continue roasting for 50 min, stirring occasionally. Transfer to large bowl and let cool. Mix in 3 T of vinaigrette and 1/3 cup Roquefort.

Boil green beans about 3 minutes, until crisp. Drain and rinse under cold water. Mix in 3 T roquefort, 2T vinagrette and walnuts.

Arrange green beans and potatoes on a large platter. This is such a savory side dish, and travels well for church picnics, cookouts, etc.

Jamie's Cranberry Spinach Salad

I love, love this recipe. I'll also substitute fresh sliced strawberries for the cranberries and pecans for the almonds. It's lovely!
